Loaded with a double whammy of berries, lots of streusel, and a creamy vanilla glaze, these red white and blue bars are an easy, festive treat for the 4th of July!

Not your average fruit bar here today! We’re in 4th of July mode and fully embracing the red white and blue eats.
Fresh blueberries, strawberries, and a sweet vanilla glaze have the colors all taken care of and it’s all wrapped up in a massive crumb bar. Dessert is served.
With no shortage of style either! You’ve just gotta go all out in the eats department on the 4th.

Hands down, the best part about this recipe is that the crust and the streusel are the same! No fussing around with multiple layers here today, these bars will only take about 15 minutes to assemble and then the oven takes care of the rest.
These Bars feature…
- A buttery oatmeal crust and streusel
- Blueberry and strawberry fruit filling
- A creamy vanilla glaze on top

Making the Bars
(scroll down to the bottom of the post for the full recipe)
Ingredients You Will Need
- Oats
- All-purpose flour
- Brown sugar
- Baking powder
- Kosher salt
- Unsalted butter
- Greek yogurt
- Vanilla extract
- Blueberries
- Strawberries
- Lemon juice
- Granulated sugar
- Cornstarch
- Powdered sugar
- 2% or skim milk

Tips for Perfect Bars
- Reserve 3/4 cup crumb mixture for topping – the oatmeal crumb mixture acts as both the crust AND streusel topping to keep these bars extra easy.
- Arrange fruit filling in separate lines – this gives these bars a fun patriotic effect.
- Bake bars 40-45 minutes – you’ll know the bars are done when the berry filling is bubbly and the topping is golden brown.
- Allow bars to cool before slicing – for clean cuts, I recommend allowing bars to cool completely in pan before using parchment paper to remove and slice into squares.
Recipe Variations
Try these ideas for a different twist on these bars.
- Use another fruit – try raspberries or blackberries in place of the blueberries and strawberries.
- Add nuts – try adding 1/2 cup toasted chopped pecans or walnuts to the crust/topping.
- Flavor glaze – add 1 teaspoon orange or lemon zest to the glaze.
Storing and Freezing Bars
These bars store well in an airtight container at room temperature up to 4 days. You can also store the bars in refrigerator to extend their life by a few days.
To freeze bars, allow to cool completely, wrap well, and freeze up to 2 months. Thaw bars completely on countertop then top with powdered sugar glaze for serving.

These bars are the absolute best way to cap off your 4th of July cookout! The multi-berry filling is so summery, yet festive at the same time and that killer vanilla glaze brings everything together.
Dare I say, even breakfast material??

Wnat to hear the most depressing thing ever? They cancelled our fireworks this year! With the big draught in California, and all the dry grass, they don’t want to risk any fire. So now we have to drive allll the way to the beach for fireworks. Lame! These bars look delicious! And no, no such thing as too much crumb topping!
Sarah says
No waaaay! That’s so lame. But at least you get to see the fireworks on the beach, so that’s fun! (never done that myself!) 😉 Thanks Natalie!

My goodness, you are some kind of marvel. I’ve been following some blogs and somehow yours has become my favorite…well, we know how! Then I just noticed on the side bar how to make French press coffee? Are you kidding me? I’m staring at my husband’s coffee maker that has a million nooks and crannies to clean and I have a French press that was given to me and I’ve never used it. This is very exciting! Thank you!
