Maple roasted strawberries and creamy steel-cut oats are a match made in heaven with these easy strawberry steel-cut oats!

Ingredients

  • 2 cups fresh or frozen strawberries, sliced
  • 4 tablespoons maple syrup, divided
  • 1 cup water
  • 1 cup 2% or skim milk
  • 1/2 cup steel-cut oats
  • Pinch salt
  • Milk for serving

Instructions

  • Place strawberries in a single layer on a greased baking sheet. Drizzle with 2 tablespoons maple syrup. Roast strawberries at 400F 10-15 minutes until strawberries are soft and juicy.
  • In a medium saucepan over medium-high heat, bring water and milk to a simmer. Stir in oats, reduce heat to low, and allow to cook over low 10-15 minutes, stirring frequently until oatmeal is soft and creamy. Remove from heat and stir in remaining 2 tablespoons maple syrup and salt.
  • Divide oatmeal between two bowls and top with roasted strawberries and milk. Serve immediately and enjoy!

Notes

Storing Instructions
Oats are best if served immediately after cooking.
