Ingredients
2cupsfresh or frozen strawberries, sliced
4tablespoonsmaple syrup, divided
1cupwater
1cup2% or skim milk
1/2cupsteel-cut oats
Pinch salt
Milk for serving
Instructions
Place strawberries in a single layer on a greased baking sheet. Drizzle with 2 tablespoons maple syrup. Roast strawberries at 400F 10-15 minutes until strawberries are soft and juicy.
In a medium saucepan over medium-high heat, bring water and milk to a simmer. Stir in oats, reduce heat to low, and allow to cook over low 10-15 minutes, stirring frequently until oatmeal is soft and creamy. Remove from heat and stir in remaining 2 tablespoons maple syrup and salt.
Divide oatmeal between two bowls and top with roasted strawberries and milk. Serve immediately and enjoy!
