Baked in minutes on only one sheet pan, these honey BBQ meatballs are coated in a sweet and tangy homemade honey BBQ sauce and roasted alongside tender sweet potatoes.
Combine all sauce ingredients in a medium saucepan and bring to a simmer over medium-high heat. Reduce heat to medium-low and allow to simmer 5-7 minutes until bubbly and slightly reduced, stirring occasionally.
Remove barbecue sauce from heat and season with salt and pepper to taste. Divide sauce evenly between two small bowls and set aside.
Meatballs and Sweet Potatoes
Preheat oven to 400F and lightly grease a large sheet pan. Set aside.
In a large bowl, combine ground beef, breadcrumbs, salt, pepper, garlic, and egg. Scoop mixture into 1-inch meatballs and place on half of prepared sheet pan. Brush meatballs with half of barbecue sauce.
Toss sweet potatoes, sweet pepper, and onion with vegetable oil and 2 tablespoons barbecue sauce on other half of sheet pan and season with salt and pepper to taste. Arrange in a single layer.
Bake meatballs and sweet potatoes at 400F 20-25 minutes until meatballs register 165F and sweet potatoes are tender.
Remove pan from oven and brush meatballs and sweet potatoes with remaining half of barbecue sauce. Top with parsley and serve warm. Enjoy!
