Everybody loves a good meatball and these ones tick just about every box! We’ve got a quick homemade barbecue sauce that really pushes them over the edge and they get roasted alongside sweet potatoes and peppers for a full meal in one.

There’s nothing fancy going on here today but boy, do these flavors ever shine! The sauce has a perfect level of sweetness that goes so well with the savory beef meatballs and all that tender sweet potato goodness.

Making the BBQ Meatballs

Ingredients You Will Need
- Ketchup
- Honey
- Brown sugar
- Apple cider vinegar
- Worcestershire sauce
- Spices
- Ground beef
- Panko breadcrumbs
- Garlic
- Egg
- Sweet potatoes
- Sweet pepper
- Yellow onion
- Vegetable oil
- Parsley

Tips for Perfect BBQ Meatballs
- Gently combine meat – handle the meatball mixture with light hands so the meatballs bake up tender and juicy.
- Cut sweet potatoes and peppers in uniform size – aim for 1/2-inch cubes so the vegetables cook up evenly.
- Roast in a single layer – this ensures that the meatballs and vegetables get an even heating surface.
- Brush meatballs with half of sauce before baking – save the other half for brushing on meatballs after baking for extra saucy meatballs.
- Temp meatballs – use a kitchen thermometer to temp the meatballs to make sure they reach 165F.

To reheat meals, microwave individual portions on high 1-2 minutes until meatballs and sweet potatoes are heated through. You can also throw everything back on the sheet pan and roast at 375F 20-25 minutes.

Sheet Pan Honey BBQ Meatballs with Sweet Potatoes

Ingredients
Honey BBQ Sauce
- 3/4 cup ketchup
- 1/4 cup honey
- 2 tablespoons light brown sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked or regular paprika
- Salt and pepper to taste
Meatballs and Sweet Potatoes
- 1 lb ground beef
- 1/2 cup panko breadcrumbs
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 medium cloves garlic, minced
- 1 large egg
- 2 medium sweet potatoes, cut into 1/2-inch cubes
- 1 medium sweet pepper, cored and cut into 1/2-inch cubes
- 1 small yellow onion, finely diced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- 2 tablespoons minced fresh parsley
Instructions
Honey BBQ Sauce
- Combine all sauce ingredients in a medium saucepan and bring to a simmer over medium-high heat. Reduce heat to medium-low and allow to simmer 5-7 minutes until bubbly and slightly reduced, stirring occasionally.
- Remove barbecue sauce from heat and season with salt and pepper to taste. Divide sauce evenly between two small bowls and set aside.
Meatballs and Sweet Potatoes
- Preheat oven to 400F and lightly grease a large sheet pan. Set aside.
- In a large bowl, combine ground beef, breadcrumbs, salt, pepper, garlic, and egg. Scoop mixture into 1-inch meatballs and place on half of prepared sheet pan. Brush meatballs with half of barbecue sauce.
- Toss sweet potatoes, sweet pepper, and onion with vegetable oil and 2 tablespoons barbecue sauce on other half of sheet pan and season with salt and pepper to taste. Arrange in a single layer.
- Bake meatballs and sweet potatoes at 400F 20-25 minutes until meatballs register 165F and sweet potatoes are tender.
- Remove pan from oven and brush meatballs and sweet potatoes with remaining half of barbecue sauce. Top with parsley and serve warm. Enjoy!
