Roasted all on one sheet pan in only 30 minutes, this lemon Dijon salmon is roasted alongside tender broccolini in a fresh and zingy lemon Dijon sauce.
Preheat oven to 400F and lightly grease a large sheet pan. Season salmon fillets on both sides with salt and pepper and arrange on sheet pan. Drizzle broccolini with olive oil, season with salt and pepper to taste and lightly toss. Arrange on sheet pan alongside salmon.
In a small bowl, whisk lemon zest, juice, mustard, honey, and garlic until smooth. Drizzle sauce over salmon and broccolini. Arrange lemon slices on salmon fillets and around broccolini.
Roast salmon and broccolini at 400F 12-15 minutes until salmon registers 130F and broccolini is tender. Remove lemon slices for serving and top salmon and broccolini with fresh minced chives. Serve warm and enjoy!
