Grease a 4-quart slow cooker well. Arrange chicken in the bottom of slow cooker and season with salt and pepper. Pour buffalo sauce and ranch dressing over chicken and top with garlic and cubed cream cheese.
Cover slow cooker and cook on high 2-3 hours or on low 4-5 hours until chicken can easily be pulled apart with a fork.
Use a fork to shred chicken and toss back into sauce, stirring until evenly combined and saucy. Season dip with salt and pepper to taste.
Arrange chicken in an even layer in slow cooker and top with cheeses. Cover slow cooker and allow to cook on high an additional 30-45 minutes until cheese is melted and edges are bubbly.
Top buffalo chicken dip with green onions and blue cheese if using and serve warm with chips, crackers, or vegetables for dipping.
