Slow cooker, please step up to the countertop.

There’s nothing complicated about this recipe! We’re following pretty much basic buffalo chicken dip procedure which means we’ve got rich cream cheese, a touch of ranch dressing, buffalo sauce, and lots of fresh garlic coating chicken breasts.
A slow ‘n’ steady trip to the slow cooker and a little shredded cheese action later and we’ve got app perfection staring us in the face.

Ingredients You Will Need
- Chicken breasts
- Buffalo sauce
- Ranch dressing
- Garlic
- Cream cheese
- Monterey jack cheese
- Cheddar cheese
- Green onion
- Blue cheese
Choosing Your Chicken
I recommend using boneless skinless chicken breasts for this recipe. You will need about 1 lb total which should equal about 2 medium breasts.
I don’t recommend using a dark meat such as thighs in the recipe as this is a richer cut of meat and doesn’t hold up as well as lean breasts do under the buffalo sauce.

Tips for Perfect Buffalo Chicken Dip
- Season chicken breasts – season the chicken with salt and pepper to taste before cooking.
- Cube cream cheese – this evenly distributes the cream cheese through out the slow cooker.
- Cook chicken until easily shredded – you can cook the chicken on low 2-3 hours or on high 4-5 hours. The chicken is ready when it can easily be pulled apart with a fork.
- Top dip with cheese and continue cooking – once the chicken is shredded, toss it back in the sauce and top the dip with cheese. Cook the dip an additional 30-45 minutes on high until the cheese is melted and edges are bubbly.
- Keep dip warm in slow cooker – you can keep the dip on the ‘warm’ setting in slow cooker up to 3 hours.
Recipe Variations
Try these ideas for a different twist on this dip.
- Use pre-cooked chicken – you will need about 2 cups shredded cooked chicken in place of the chicken breasts. Reduce the cook time to 1-2 hours on high or 3-4 hours on low.
- Make it spicy – this dip is very mild as-is, but you can easily bump up the spice with a minced jalapeno or cayenne pepper.
- Try another cheese – try mozzarella, provolone, asiago, or Parmesan.
Serving Suggestions
This dip is great served with tortilla chips, crackers, celery sticks, or carrot sticks for dipping. We’ve also used this dip as a nacho topper or piled it into burritos or quesadillas.
You can top the dip with blue cheese if you like it but it’s also just as good without. Don’t skip the green onions though, they add a lovely fresh flavor.

It’s the ease of this buffalo chicken dip that really does it for me! It’s one of those apps you can let happily cook away on the countertop all morning and then keep it warm in the afternoon for serving.
Really impossible to mess this one up, folks. Get those chips ready!
