Ingredients

Honey Roasted Strawberries

  • 2 cups strawberries, cut into 1/2-inch cubes
  • 3 tablespoons honey
  • 1 tablespoon lemon juice

Whipped Goat Cheese

  • 8 oz plain goat cheese
  • 4 oz neufchatel cream cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon zest
  • Salt and pepper to taste
  • 1/4 cup chopped pistachios
  • 2 tablespoons minced fresh basil
  • Crostini or crackers for serving

Instructions

Honey Roasted Strawberries

  • Preheat oven to 375F and line a small sheet pan with parchment paper. Toss strawberries, honey, and lemon juice together until evenly coated and arrange in a single layer on sheet pan.
  • Roast strawberries at 375F 10-12 minutes until strawberries are softened and juicy. Set aside for a moment.

Whipped Goat Cheese

  • Combine goat cheese, cream cheese, lemon juice, and zest in a food processor or blender and blend on high speed 1-2 minutes until smooth and creamy. Season goat cheese with salt and pepper to taste.
  • Spoon goat cheese into a serving bowl and top with honey roasted strawberries, any pan juices, pistachios, and basil. Serve goat cheese with crostini or crackers for dipping. Enjoy!
