Combine all sour cream ingredients in a blender or food processor and blend until smooth. Season sour cream with salt and pepper to taste and refrigerate until ready to serve.
Yellow Squash Fritters
Shred yellow squash on the large holes of a box grater. Place shredded squash in a large bowl and toss with 1 teaspoon kosher salt. Allow squash to sit 10 minutes to draw out the moisture. Drain liquid from bowl, place squash in the center of a kitchen towel and squeeze tightly to drain the excess water out.
Combine shredded squash, panko, flour, baking powder, onion, garlic, and egg in a large bowl, gently folding until a soft dough forms. Season with salt and pepper to taste.
Heat a large skillet over medium-high heat. Once pan is hot, add 2 tablespoons oil and swirl to coat pan. Working in batches, drop batter by 1/4-cupfuls into hot pan and flatten slightly. Cook fritters 2-3 minutes on each side, flipping once until fritters are golden brown. Repeat cooking method with remaining batter, adding additional oil to pan as needed between batches.
Serve fritters immediately warm with sour cream for serving. Enjoy!
