Tis the season for all things squash and zucchini! I personally think zucchini gets a little bit too much of the hype this time of year so I’m choosing to spotlight their less-popular cousin, yellow squash!
And that means a crispy, golden fritter is coming your way today. Along with a sidekick of basil sour cream, O-M-G.

This just tastes like quintessential mid-summer eats to me. It took more than a few tries to get the texture of these fritters right but I can confidently say that they are perfection now.
I’m talking earth-shattering crispy outsides, pillowy insides, and for the love of God, please pass more of that sour cream my way.

Ingredients You Will Need
- Sour cream
- Garlic
- Fresh basil
- Yellow squash
- Panko breadcrumbs
- All-purpose flour
- Baking powder
- Yellow onion
- Egg
- Vegetable oil

Tips for Perfect Squash Fritters
- Shred summer squash – use the large holes on a box grater to shred the squash.
- Salt squash and allow to sit – toss squash with kosher salt and allow to sit 10 minutes to draw out the extra water.
- Squeeze water out – use a kitchen towel to squeeze the extra moisture out of squash. This step makes for a non-stodgy texture and instead yields fritters that are light and crispy.
- Gently fold dough – be careful not to overwork the dough as this may negatively effect the texture of the fritters.
- Heat pan properly – make sure your pan is nice and hot before frying the fritters.
- Add oil as needed to pan – start with 2 tablespoons of vegetable oil evenly swirled around the pan and add more as needed between batches.
- Fry fritters by 1/4-cupfuls – scoop the dough with a 1/4 cup into pan and use the back of cup to flatten fritters slightly.
- Serve fritters immediately – the texture of these fritters are best if enjoyed hot from the skillet.

Try these ideas for a different twist on these fritters.
- Substitute zucchini – zucchini will work great in place of the summer squash.
- Add some heat – add cayenne pepper or a minced jalapeno to the fritter dough.

Yellow Squash Fritters with Basil Sour Cream

Ingredients
Basil Sour Cream
- 1/2 cup sour cream
- 1 medium clove garlic, peeled
- 1/4 cup firmly-packed basil leaves
- Salt and pepper to taste
Yellow Squash Fritters
- 1 lb yellow squash (about 2 medium squash)
- Salt and pepper to taste
- 1/2 cup (45g) panko breadcrumbs
- 1/2 cup (70g) all-purpose flour
- 1/2 teaspoon (2g) baking powder
- 1/4 cup minced yellow onion
- 2 medium cloves garlic, minced
- 1 large egg, lightly beaten
- Vegetable oil for cooking
Instructions
Basil Sour Cream
- Combine all sour cream ingredients in a blender or food processor and blend until smooth. Season sour cream with salt and pepper to taste and refrigerate until ready to serve.
Yellow Squash Fritters
- Shred yellow squash on the large holes of a box grater. Place shredded squash in a large bowl and toss with 1 teaspoon kosher salt. Allow squash to sit 10 minutes to draw out the moisture. Drain liquid from bowl, place squash in the center of a kitchen towel and squeeze tightly to drain the excess water out.
- Combine shredded squash, panko, flour, baking powder, onion, garlic, and egg in a large bowl, gently folding until a soft dough forms. Season with salt and pepper to taste.
- Heat a large skillet over medium-high heat. Once pan is hot, add 2 tablespoons oil and swirl to coat pan. Working in batches, drop batter by 1/4-cupfuls into hot pan and flatten slightly. Cook fritters 2-3 minutes on each side, flipping once until fritters are golden brown. Repeat cooking method with remaining batter, adding additional oil to pan as needed between batches.
- Serve fritters immediately warm with sour cream for serving. Enjoy!
