Zucchini Soba Noodle Salad with Sesame Ginger Dressing

Ingredients

Sesame Ginger Dressing

Zucchini Soba Noodle Salad

  • 8 oz soba noodles
  • 2 medium zucchinis, spiralized (or julienned)
  • 1 medium sweet pepper, julienned into thin slices
  • 1/2 cup thinly-sliced green onions
  • 2 tablespoons minced fresh cilantro
  • 1/4 cup roasted peanuts, minced
  • Toasted sesame seeds and additional cilantro and green onions for garnish

Instructions

Sesame Ginger Dressing

  • Combine all dressing ingredients in a blender or food processor and blend on high until smooth. Season dressing with salt and pepper to taste if needed and refrigerate until ready to use.

Zucchini Soba Noodle Salad

  • Cook soba noodles in salted boiling water according to package instructions until al dente. Rinse noodles well in cold water until cooled and drain.
  • Combine soba noodles, zucchini noodles, sweet pepper, green onions, cilantro, and peanuts in a large bowl. Drizzle dressing over top and toss until salad is evenly coated.
  • Garnish salad with sesame seeds, cilantro, and green onions and serve immediately. Enjoy!

Salad is best if served immediately after assembly.
