Zucchini Soba Noodle Salad with Sesame Ginger Dressing
Zucchini and soba noodles are the perfect salad base in this zucchini soba noodle salad that features crunchy sweet peppers, lots of fresh herbs, and a flavorful fresh ginger sesame dressing.
Toasted sesame seeds and additional cilantro and green onions for garnish
Instructions
Sesame Ginger Dressing
Combine all dressing ingredients in a blender or food processor and blend on high until smooth. Season dressing with salt and pepper to taste if needed and refrigerate until ready to use.
Zucchini Soba Noodle Salad
Cook soba noodles in salted boiling water according to package instructions until al dente. Rinse noodles well in cold water until cooled and drain.
Combine soba noodles, zucchini noodles, sweet pepper, green onions, cilantro, and peanuts in a large bowl. Drizzle dressing over top and toss until salad is evenly coated.
Garnish salad with sesame seeds, cilantro, and green onions and serve immediately. Enjoy!
