Friends, this salad really does have it all. We’ve got half-and-half soba noodles and zucchini noodles making this salad both hearty and light at the same time, tons of fresh summer ingredients, and omg that dressing…

Definitely one of those salads where you’re going to count down the minutes til that lunch break. I know I sure do.

Ingredients You Will Need
- Soy sauce
- Rice wine vinegar
- Vegetable oil
- Sesame oil
- Brown sugar
- Ginger
- Garlic
- Red pepper flakes
- Soba noodles
- Zucchini
- Sweet pepper
- Green onions
- Cilantro
- Peanuts
- Sesame seeds

Tips for Perfect Soba Noodle Salad
- Puree dressing in blender or food processor – this breaks down the dressing into a smooth texture.
- Use a mix of soba noodles and zucchini noodles – we love the texture variety it gives this salad. If you don’t have a spiralizer, you can julienne the zucchini instead.
- Cook soba noodles to al dente – follow package instructions for timing and make sure to cook noodles only to al dente so they don’t turn mushy.
- Rinse and drain noodles – this removes the extra starch from the noodles and stops the cooking process.
- Dress salad just before serving – this will keep all the ingredients fresh and crisp.

Ingredients
Sesame Ginger Dressing
- 1/4 cup low-sodium soy sauce
- 1/4 cup rice wine vinegar
- 3 tablespoons vegetable oil
- 2 tablespoons sesame oil
- 1 tablespoon packed light brown sugar

- 2 medium cloves garlic, peeled

Zucchini Soba Noodle Salad
- 8 oz soba noodles
- 2 medium zucchinis, spiralized (or julienned)
- 1 medium sweet pepper, julienned into thin slices
- 1/2 cup thinly-sliced green onions
- 2 tablespoons minced fresh cilantro
- 1/4 cup roasted peanuts, minced
- Toasted sesame seeds and additional cilantro and green onions for garnish
Instructions
Sesame Ginger Dressing
- Combine all dressing ingredients in a blender or food processor and blend on high until smooth. Season dressing with salt and pepper to taste if needed and refrigerate until ready to use.
Zucchini Soba Noodle Salad
- Cook soba noodles in salted boiling water according to package instructions until al dente. Rinse noodles well in cold water until cooled and drain.
- Combine soba noodles, zucchini noodles, sweet pepper, green onions, cilantro, and peanuts in a large bowl. Drizzle dressing over top and toss until salad is evenly coated.
- Garnish salad with sesame seeds, cilantro, and green onions and serve immediately. Enjoy!
