Your Thanksgiving menu wouldn’t be complete without the stuffing! This slow-cooker version cooks low ‘n’ slow and is jam-packed with lots of tender sweet potato cubes. Comfort in a pot!
I’m a sucker for the stuffing at Thanksgiving. A stuffing-sucker, if you will.

I’m also a sweet potato crazy-lady. Seriously I love on ’em as if it’s the last time I’ll ever eat them.
On a sidenote here, GUYS. I’ve gotta tell you this: Somehow it slipped my mom’s mind to tell me LAST SPRING that she planted sweet potatoes in the veggie garden.
She was out harvesting the last of our veggies last weekend, and lo and behold, she came inside with her arms full of sweet potatoes.
Me: WHERE DID YOU GET THOSE?!
Mom: Oh, didn’t I tell you I planted sweet potatoes?
Yeah right, Mom. I think I would have remembered that.
Then I sorta-kinda stole every single one of those gorgeous sweet potatoes right outta her arms.
And I obviously put them to very good use.
See, I’ve had this idea in my head since basically August of a slow-cooked, easy-peasy-lemon-squeezy stuffing that took 5 minutes to throw in the crockpot and then cooked low ‘n’ slow all day. That just so happened to be filled with millions of adorable little sweet potato cubes.
All this that ultimately resulted in filling your house with those special once-a-year smells of Thanksgiving. ♥
And filling your tummy with the YUM.
Yeaaaah I managed to hold off TWO months before giving into my stuffing cravings. Now that it’s November? Loooook out baby…
I’m just gonna ignore the turkey on T-day and literally stuff myself with this stuffing. It’s been too long…
The beauty of this stuffing is obviously that it’s SLOW-COOKED. That means on T-day, you can literally just throw all the ingredients in the crockpot and let it cook itself while you focus on preparing the rest of the feast. (i.e–tackling that turkey)
While it cooks, the bread cubes get all moist and chewy on the inside and the sweet potato cubes cook up soft and tender. The flavors meld SO well in this stuffing, and it’s primarily because you’re cooking it nice and slow.
Slow cooking = Best flavors. ♥
Um, also you wouldn’t believe the smells that are going to fill your house ALL DAY from this stuffing. It’s literally making me drool just thinking about it…
*wipes drool off keyboard*
Move over Mr. Turkey! Let the stuffing have the spotlight.
- 1/4 cup butter
- 1 medium onion, finely chopped
- 3 celery ribs, diced
- 6 cups dry (1/2 in) bread cubes
- 1 cup chicken broth
- 1 teaspoon garlic salt
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon poultry seasoning
- 1 teaspoon rubbed sage
- 1 large sweet potato, peeled and cut into 1/4 in cubes
- 1/2 cup chopped walnuts
- In a medium saucepan, melt butter over medium-high heat. Add onion and celery and saute, stirring frequently until just tender.
- In a large bowl, combine sauteed veggies with remaining ingredients tossing until bread cubes are just moistened. Transfer mixture to a greased 3-qt slow-cooker and cook on low for 4 hours (or 2 hours on high) Serve stuffing warm.
