Ingredients You Will Need
- Mango
- Avocado
- Red onion
- Jalapeno
- Cilantro
- Lime juice
- Honey
- Dijon mustard
- Whole grain mustard
- Apple cider vinegar
- Chicken thighs
- Vegetable oil
- Rice or other grain
Choosing Your Chicken
I recommend using boneless skinless chicken thighs for this recipe. This cut of chicken is fast to cook and turns out super tender and juicy.
If you don’t have thighs on hand, boneless skinless chicken breasts will work, however, you will likely need to add a few minutes to the bake time.

Tips for Perfect Honey Mustard Bowls
- Dice mango and avocado in uniform cubes – aim for 1/4-inch cubes for a uniform salsa.
- Use fresh cilantro and lime juice – using these ingredients fresh adds tons of flavor to the salsa.
- Make homemade honey mustard – homemade honey mustard is so worth the 5 minutes it takes to mix together.
- Divide honey mustard in half – use half the honey mustard for drizzling on the chicken before baking and save the other half for drizzling over assembled bowls.
- Sear chicken thighs – this adds a lovely golden, flavorful crust to the chicken.
Recipe Variations
Try these ideas for a different twist on these bowls.
- Use another fruit in salsa – try pineapple in place of the mango.
- Try another grain base – we also love a base of quinoa, brown rice, cauliflower rice, or farro.
- Add more toppings – try shredded lettuce, slaw, tomatoes, or crushed tortilla chips.

Follow these instructions for time-saving meal prep tips.
- Make the salsa – store the salsa in refrigerator up to 6 days.
- Steam the bowl base – cook the rice or quinoa and store in meal prep containers up to 6 days.
- Cook the chicken – cook and slice the chicken and arrange in meal prep containers with rice.
- Assembly – when ready to serve, reheat the meal prep containers 1-2 minutes in microwave and top with mango salsa.

Honey Mustard Chicken Bowls with Mango Salsa

Ingredients
Mango Salsa
- 1 medium mango, peeled, cored, and diced into 1/4-inch cubes
- 1 medium avocado, pitted and diced into 1/4-inch cubes
- 1/2 cup finely diced red onion
- 1 medium jalapeno, minced
- 2 tablespoons freshly-squeezed lime juice
- 2 tablespoons minced fresh cilantro
- Salt and pepper to taste
Honey Mustard Chicken Bowls
- 1/3 cup honey
- 3 tablespoons Dijon mustard
- 3 tablespoons whole grain mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- 1-1/2 cups boneless skinless chicken thighs
- 2 tablespoons vegetable oil
- 4 cups cooked rice or quinoa
Instructions
Mango Salsa
- In a medium bowl, combine all salsa ingredients. Season salsa with salt and pepper to taste and refrigerate until ready to serve.
Honey Mustard Chicken Bowls
- Preheat oven to 375F. In a small bowl, whisk honey, both mustards, and apple cider vinegar. Season honey mustard with salt and pepper to taste and set aside for a moment.
- Season chicken thighs all over with salt and pepper. Heat a large oven-safe skillet over medium-high heat. Once pan is hot, add oil to pan and swirl to evenly coat. Add chicken thighs in a single layer and sear 3-4 minutes on each side until golden-brown.
- Remove pan from heat and spoon half of honey mustard over seared chicken. Transfer pan to oven and bake chicken at 375F 5-10 minutes until chicken registers 165F. Transfer chicken to a cutting board and thinly slice into strips.
- Divide rice between 4 serving bowls and top with chicken and mango salsa. Drizzle chicken with additional honey mustard and serve warm. Enjoy!
