Making the Turkey Burgers

Ingredients You Will Need
- Feta
- Spinach
- Garlic
- Ground turkey
- Panko breadcrumbs
- Egg
- Parsley
- Dijon mustard
- Sweet onion
- Vegetable oil
- Buns
- Arugula
- Tomato
Choosing Your Feta
I recommend using water-packed block feta and hand-crumbling it yourself for this recipe. Do not substitute pre-crumbled feta as it will not break down into a smooth and creamy texture as well.

Tips for Perfect Turkey Burgers
- Whip feta in food processor or blender – either of these tools will work great for breaking down the feta. Make sure to scrape down the sides several times throughout blending.
- Gently knead burger meat – use a light hand when kneading the burger patty ingredients so as not to overmix the dough and keep the burger juicy once cooked.
- Grill onions – you can use a strip of tin foil or a grill pan for this part. The grilled onions add a lovely texture to the burgers.
- Season tomatoes – season tomatoes well with salt and pepper for extra flavor.
- Toast buns on grill – I like to toast the buns directly on the grill after the patties are done. Place buns split-side down and toast 30-60 seconds on grill.
Recipe Variations
Try these ideas for a different twist on these burgers.
- Add more toppings – try lettuce, pickles, avocado, or bacon strips.
- Use ground chicken – you can easily swap out the turkey for ground chicken instead.
Stovetop Instructions
Don’t have a grill? You can still make this recipe on the stovetop or in the oven instead.
Stovetop: working in batches, grease a large skillet and heat over medium-high heat. Once pan is hot, add patties and sear 8-10 minutes, flipping once until meat register 165F.
Oven: arrange the patties in a single layer on a large greased sheet pan. Bake patties at 400F 15-20 minutes until meat registers 165F.

It’s an unlikely pairing, I know! But trust me, every component of these burgers works flawlessly together. The creamy spinach whipped feta adds the perfect layer of indulgence to the lean, juicy turkey patties and the grilled onions on top add a fantastic texture and smoky flavor.

Whipped Feta Turkey Burgers

Ingredients
Whipped Feta
- 1/2 cup block feta cheese, crumbled
- 1/2 cup firmly-packed baby spinach
- 1 small clove garlic, peeled
Turkey Burgers
- 1 lb ground turkey
- 1/2 cup panko breadcrumbs
- 1 large egg, lightly beaten
- 1 medium clove garlic, minced
- 1 tablespoon minced fresh parsley
- 1 tablespoon Dijon mustard
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 medium sweet onion, thinly sliced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Toasted burger buns, arugula, and sliced tomato for serving
Instructions
Whipped Feta
- Place the feta ingredients in a food processor or blender and blend on high speed 1-2 minutes, scraping down sides as necessary, until feta is smooth and creamy. Store feta in refrigerator until ready to use.
Turkey Burgers
- In a large bowl, combine ground turkey, breadcrumbs, egg, garlic, parsley, mustard, salt, and pepper. Gently knead until just combined and form mixture into 4 patties.
- Toss sliced onion with vegetable oil and season with salt and pepper to taste. Arrange onions in the center of a strip of tin foil and fold edges of foil to form a packet (or saute onions over medium-high heat on stovetop if cooking indoors)
- Grease the grates of an outdoor grill well with oil and preheat to 375F. Alternatively if cooking indoors, grease a large skillet well and heat over medium-high heat. Place burgers in a single layer on preheated grill grates or in pan and cook burgers 8-10 minutes, flipping once until golden-brown and meat registers 165F.
- Place foil packet with onions directly on grill grates and toss 4-6 minutes until onions are tender.
- Assemble burgers by spreading whipped feta on top half of toasted buns. Place arugula on bottom half of toasted buns and top with a burger patty, tomato slice, and grilled onions. Serve immediately and enjoy!
