Sometimes I wonder what life would be like without chocolate. Have you ever stopped and thought about that? No doubt the world would be a dark, dark place to live. I’m not even sure if life would be worth living without it…
I mean, can you even imagine the darkness and dreariness that would take over the world? I don’t really want to…
Wow, the thoughts going through my head right now are kiiiiinda freaking me out. I’m just chalking it up to today being Monday and all…
So I find it best NOT to think about these dreary chocolate-less subjects and just bury my woes in mile-high stacks of double-whammy chocolate pancakes.
With bananas because, uh, health-food ALL the way.
On a Monday aaaaaall the way. Yeeeees.
Yeeees, my friends, your Monday is about to be made. I made us all breakfast in a big, fat, carb-loaded way.
With a double-delight of chocolate and a boatload of bananas. In a big ‘ol stack of fluffier-than-clouds pancakes. Yep, you’re comin’ over.
And if you’re not over in about 10 seconds from now, there’s a serious chance I may end up eating your share of pancakes.
Sorry. Ugh. My sharing skills need a little bit of work.
Along with my table manners. I tell ‘ya, trying to eat a mile-high stack of pancakes may sound amazing, but in reality, it is SERIOUS business if the people watching you happen to think their names are Ms./Mr. Manners.
A.k.a. My entire judgy-judgy family and their judgy pancake-mannerisms eyes. Me and my broom closet have become BFFs because of this….
Fact: I would beat the pants off you in a pancake eating contest. No liez.
Now that I’ve flushed about 5 minutes of your life down the drain by babbling on and on about my pancake problems, shall we talk about today’s actual pancakes?
They’ve got all the double-chocolate joy. All the banana goodness. All that super-thick and fluffy texture goin’ on. The SPEEDINESS. Really, there’s nothing NOT to love about a big ‘ol pile of this pancake paradise.
The syrup-drowning is just the icing on the cake. And 110% necessary.

Your pre-coffee early morning is about to be made. On a quick sidenote, am I the only one who is seriously so.freaking.PUMPED that daylights saving time started yesterday?? One more hour of daylight which means an extra hour to photograph food! All the YES.
And yeah, that’s pretty much the only reason I’m psyched about daylights saving time. That and the fact that summer is practically here.
Yeah, that foot of snow outside told me so.

Double-Chocolate Banana Pancakes

Ingredients
- 2 cups white whole wheat flour
- 1/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons coconut sugar or brown sugar
- 1 large ripe banana mashed
- 3 tablespoons vegetable oil
- 1 large egg
- 2 cups buttermilk
- 3/4 cup semisweet chocolate chips
- Maple syrup for serving
Instructions
- In a large bowl, whisk flour, cocoa, baking powder, baking soda, salt, and sugar until combined. Set aside.
- In a separate large bowl, whisk mashed banana, oil, egg, and buttermilk until smooth. Gently fold flour mixture into liquid until just combined. Fold in chocolate chips.
- Heat a nonstick skillet to medium-high heat and working in batches, drop pancake batter by 1/4 cupfuls and cook 1-2 minutes on each side, flipping once. Serve pancakes warm with maple syrup.
