You won’t believe that this loaded peanut butter granola is good for you! It’s so crunchy, peanut butter-y and addicting, you’ll want to eat it all straight from the pan!
You guys. I have a itsy-bitsy, teeny-weeny favor to ask of you: Who would be interested in dropping by my house, say, right now and taking all of this granola out of my stubbornly-grasping, granola-snatching hands?
Any takers? C’mon people, I’m desperate here. This granola has fastened it’s deadly grasp on me. And by deadly, I mean ADDICTING. Help!!
So switching gears here for a quick sec. How was everybody’s Mother’s Day? Did you spoil your sweet mother with pancakes for brunch and chocolate for dinner? I DID. It’s the easiest way to moi mama’s heart. 😉
You know what else I spoiled Mom with? AN OMELET BAR. For reals guys, I set up a legit, professional OMELET BAR for our family brunch yesterday.
Repeat those words after me: O-M-E-L-E-T B-A-R.
Am I crazy-ambitious to pull off such an insanely-involved kinda brunch activity? Probably. You guys know me so well!
I totally made a thing out of this too. I set up all the pastries, pancakes, fruit and such in the living room and then was like GUYS! Come fill your plates here, then hop over into the kitchen and I shall take your omelet order!
Once those words were spoken, I knew I had every person in the palm of my tiny hand. There was practically a STAMPEDE into the kitchen.
Seriously though, I can’t even tell you how freakin’ cool I felt standing there at the stove with my heavy-duty skillet, my biggest bowl fulla’ eggs and a counter full of omelet add-ins, making everybody’s personalized omelet orders.
IT ROCKED!! I totally felt like a pro chef. The only thing that would have made it better is if I had had one of those tall chef’s hats to complete the professional-ish feeling, but oh well! Next time for sure. 😉
So guys, the moral to this story is that if you want to win the heart of your entire family, do an omelet bar for your next brunch. DO IT.

Let us discuss peanut butter granola. To tell you the truth, there’s not much to discuss except the one, legit fact. YOU NEED THIS GRANOLA IN YOUR LIFE!
You just do. No, trust me. You really, REALLY want this in your life. This granola = everything.
Everything good and healthy too. For reals! We’ve got peanut butter, an epic form of protein, which clearly puts it in the health-food category, oats are nice and heart-healthy, and chia seeds? Besides the fact that they’re beyoooooond adorable, they are also tiny little specks of power-food!
This granola = Legit power-food. The tastiest power food.
The ADDICTING-est power-food! Honestly, once you grab that first handful, many handfuls will follow.
Many, many, MANY. Ouch. Who cares about swim-suit season anyway? Peanut butter granola is worth anything.
Plus we all know that peanut butter granola > Any other granola flavor in the world. It’s just the truth.
Perfectly crunchy. Oh-so huge and cluster-y. Loaded with not one but TWO forms of peanuts. Guys, this granola is what Monday dreams are made of. I may even be going slightly insane right now since Michael finished off the rest of this granola last night and I’ve currently got that never-ending peanut butter granola CRAVING going on. Save me.
Milk is optional but oh-so necessary here. If this granola even makes it to the cereal bowl, and there’s a distinct possibility it will not. Shoot.
This granola is going to rock your world, guys. You may even cry legit tears after that first peanut butter cluster hits your face.

Healthy Peanut Butter Chia Seed Granola

Ingredients
- 3-1/2 cups old-fashioned rolled oats
- 1 cup peanuts
- 1 cup unsweetened shredded coconut
- 2 tablespoons chia seeds
- 2 tablespoons flaxseeds
- 1/4 cup coconut sugar or brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup coconut oil
- 1/2 cup creamy peanut butter
- 1/2 cup maple syrup
- 1 egg white lightly beaten
- 1 teaspoon vanilla extract
- Milk and fruit for serving
Instructions
- Preheat oven to 300F. Line a a large baking sheet with parchment paper. Set aside.
- In a large bowl, combine oats, peanuts, coconut, chia seeds, flaxseeds, sugar, cinnamon, and salt.
- Place coconut oil and peanut butter in a small saucepan. Melt over medium-high heat until smooth and melted. Remove from heat and whisk in syrup, egg white, and vanilla.
- Pour liquid mixture over dry, stirring until just moistened. Spread granola evenly on prepared baking sheet and gently flatten with a spatula.
- Bake granola at 300F 40-45 minutes, without stirring until granola is golden-brown. Let granola cool completely, then break into bite-sized clusters. Enjoy with milk and fruit of your choice!
