Round number I-lost-count of no-bake all the things because it’s just the way things have to be when the looming weekend is calling for the hot, hot, HOT!
My freezer is stocked with popsicles and ice cream, the fridge is stocked full of these bites and I am READY for anything. Hit me with that heat.
Preferably with a cookie dough bite in each hand.

I refer to these bites as kinda a magical snack. They’re flourless and completely safe to eat raw thanks to the usage of almonds and taste EXACTLY like cookie dough!
Did I mention they whip up in one bowl in minutes flat? Yeah, magic.
These Cookie Dough Bites Feature…
- A soft and chewy cookie dough-like texture
- Creamy almond butter and almond flour
- Chunks of dark chocolate
- 5g protein and only 5g sugar per bite

Making the Bites

Ingredients You Will Need
- Almond butter
- Almond flour
- Protein powder
- Maple syrup
- Greek yogurt
- Vanilla extract
- Chocolate chunks

Tips for Perfect Cookie Dough Bites
- Use creamy almond butter – choose a creamy consistency of almond butter as this is the base of the bites.
- Choose a good brand of almond flour – I recommend using blanched almond flour. I especially love this one from Bob’s Red Mill.
- Chill bites 1 hour – this quick chill time will set the bites into a firm cookie dough texture.
Recipe Variations
Try these ideas for a different twist on these bites.
- Use another kind of chocolate – try semisweet, milk, or white chocolate.
- Add dried fruit – try dried cranberries, blueberries, or raisins.
- Use peanut butter – try creamy peanut butter in place of the almond butter.
- Make it double chocolate – add 2 tablespoons cocoa powder for an extra chocolatey kick.
Storing Instructions
These bites store well in the refrigerator up to 2 weeks as well as the freezer for 2 months. I do recommend storing them in the refrigerator until you’re ready to enjoy them for the best texture.

I’ll tell you right here and now that these little bites of heaven are just about impossible to stop eating.

Almond Butter Cookie Dough Bites

Ingredients
- 1/2 cup (140g) creamy almond butter
- 1/2 cup (50g) almond flour
- 1 scoop (25g) vanilla or chocolate protein powder
- 3 tablespoons (45g) maple syrup
- 2 tablespoons (40g) plain Greek yogurt
- 1 teaspoon vanilla extract
- 1/2 cup (70g) chopped dark or semisweet chocolate
- Pinch salt
Instructions
- Combine all ingredients in a large bowl until evenly combined. Scoop dough into 1-inch balls and place in a container.
- Chill bites in refrigerator 1 hour until bites are firm. Store in refrigerator until ready to serve. Enjoy!
