So I’m just gonna put it out there and tell you that Friday is about to get very, very real around here pretty quick.
For the simple reason that weekends require the highest amount of indulgence, and really, apple pie in the form of bars with crumb topping and buckets of glaze on top are kinda dinging all the “indulgent” bells right about now.
Totally off-topic, but guys!! I have some semi-exciting news. Most of you know that I’m currently in the middle my second year as a culinary student, right? One of the requirements for graduation (this spring!!) is that we students go on an internship with a restaurant business for a few weeks.
I’ve been keeping it hush-hush the past few weeks just in case something didn’t work out, but now I’m pleased to inform you that yours truly has been accepted to intern at McKinley’s Bakery in Fort Worth, Texas!
So actually in less than two weeks time I’ll be putting on my big girl pants and leaving my safe little town to go bake my butt off in Texas for a few weeks.
You can’t see it obviously, but I’m wearing my excited-but-ridiculously-nervous face over here.

That would be these beauties you see below. That time I took all the things you love about apple pie, jammed it into a bar, covered it with streusel and glaze, shoved the whole mess in my face and called my job here done.
My job is totally glamorous, but only when I get to shove things like these apple pie bars in my face.
Let’s talk layers really quick here!
#1. Coconut oil spiced cookie crust. Mixes up in one bowl and pats straight into the bottom of the pan. So easy a child could make it.
#2. Apple pie filling. Sweet ‘n’ spiced sliced apples. It’s as easy as that.
#3. Crumb topping. Simple cinnamon-sugary pecan crumbs that just beg you to pick ’em off the top. <<< Not just me.
#4. Glaze! Thick, creamy vanilla glaze for daaaaays. ??
So many glorious layers…so little time to eat all the apple pie bars. But dang it, I’m gonna try my best to get the job done anyway.
Somebody has to do it. I figure it might as well be you and me.

Glazed Apple Pie Crumb Bars

Ingredients
Crust
- 1 cup white whole wheat flour
- 1/3 cup coconut sugar or brown sugar
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 cup coconut oil melted
Filling
- 4 large apples peeled, cored, and thinly sliced
- 3 tablespoons white whole wheat flour
- 1/4 cup coconut sugar or brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
Topping
- 1/2 cup white whole wheat flour
- 1/4 cup chopped pecans
- 2 tablespoons coconut sugar or brown sugar
- 1 teaspoon ground cinnamon
- 1/4 cup butter melted
Glaze
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons half-and-half cream
Instructions
- Make the crust: Preheat oven to 350F. Line a 9x13 baking pan with tin foil and lightly grease. Set aside.
- In a large bowl, combine all crust ingredients until crumbly. Evenly press in the bottom of prepared pan. Bake crust at 350F 8-10 minutes or until lightly browned. Set aside.
- Make the filling: In a small bowl, combine all filling ingredients. Evenly spread over crust.
- Make the topping: In a small bowl, combine all topping ingredients until crumbly. Sprinkle evenly over apple filling. Bake bars at 350F 20-25 minutes or until golden-brown and apples are tender. Remove from oven and cool on a wire cooling rack completely.
- Make the glaze: In a small bowl, whisk all glaze ingredients until you get a thick drizzling consistency. Drizzle evenly over cooled bars, let set 5 minutes, then slice into squares. Enjoy!
