Everyone needs a banger breakfast sandwich up their sleeve and my version of banger just so happens to include pimento cheese.
Along with all the breakfast sandwich essentials including eggs, bacon, avocado, and pretty much just whatever else you can dream up.
Suffice to say, your day is about to be off on the right foot.

My favorite part about these sandwiches is that you can go off-script for a good portion of it depending on what you have in the house!
I typically make a double batch of pimento cheese and store it for my sandwiches all week and then dress up them up as I go with whatever I have in the fridge at the moment.

Choosing Your Sandwich Base
I typically go with a classic English muffin base for these breakfast sandwiches, but honestly, the sky’s the limit for what you can use! Toasted bagels, sourdough bread, Italian bread, or even tortillas would all be amazing bases as well.

Tips for Perfect Breakfast Sandwiches
- Use freshly-shredded cheddar cheese – freshly shredding the cheddar cheese lends a much better texture and sharper cheese flavor in the pimento cheese.
- Cook eggs omelet-style – I recommend cooking eggs for these sandwiches omelet-style which just means you’re going to slowly cook over medium heat, tilting pan to evenly cook eggs, and then folding into thirds.
- Toast English muffins or bread for sandwich – don’t forget to toast your bread base before assembly.
- Assemble sandwich just before serving – these breakfast sandwiches don’t store the best so make sure you assemble them only just before serving.
Recipe Variations
Try these ideas for a different twist on these sandwiches.
- Skip the meat – omit the bacon and replace with a meatless sausage or sauteed mushrooms.
- Try a different meat – try a breakfast sausage, a few slices of ham, or turkey in place of the bacon.
- Add more toppings – try fresh tomato slices, pickles, sprouts, roasted red peppers, or sun-dried tomatoes.

Ingredients
Pimento Cheese Spread
- 1/2 cup freshly-shredded mild or sharp cheddar cheese
- 2 oz cream cheese, softened
- 2 tablespoons plain Greek yogurt
- 2 tablespoons jarred pimentos, drained
- 1 small clove garlic, minced
- Pinch cayenne pepper (optional)
- Salt and pepper to taste
Breakfast Sandwich
- 1 tablespoon unsalted butter
- 6 large eggs, lightly beaten
- 4 English muffins, split and toasted
- 1 cup spring greens mix
- 1 medium avocado, pitted and thinly sliced
- 4 strips bacon, cooked until your desired crispiness
Instructions
Pimento Cheese
- In a medium bowl, combine all cheese ingredients until creamy and combined. Season with salt and pepper to taste and refrigerate until ready to use.
- Melt butter in a medium nonstick skillet over medium heat. Swirl to evenly coat pan. Pour beaten eggs into pan and allow to cook 1-2 minutes until beginning to set. Use a spatula to lift omelet edges and tilt pan to allow uncooked egg to run underneath. Once eggs are completely set, fold omelet into thirds and transfer to a cutting board. Season eggs with salt and pepper to taste and cut into 4 equal squares.
- Divide pimento cheese between toasted English muffin halves, spreading in an even layer on each half. Top each bottom half with a handful of greens, an omelet slice, a few avocado slices, and a bacon strip. Replace English muffin tops and serve breakfast sandwiches immediately. Enjoy!
