- Mini cucumbers
- Mini sweet peppers

What is Chili Crisp?
Chili crisp is an ingredient that every home chef should have a jar of in their pantry! This Chinese-based ingredient features fried chili pepper flakes and lots of aromatic ingredients like garlic and onion infused in oil. It’s very flavorful and big on the texture making it great as a condiment or sauce component in dishes.
You can find chili crisp in the Asian section of most major grocery stores alongside the other sauces. I’ve also bought amazing chili crisp off of Amazon.

Tips for Perfect Cucumber Salad
- Cut cucumber and pepper in uniform slices – aim for uniform 1/4-inch slices to make the salad easy to eat.
- Marinate salad 1 hour – this hour of marinating will infuse the cucumbers with tons of flavor.
- Add peanuts and sesame seeds before serving – this will keep their texture crispy.
Recipe Variations
Try these ideas for a different twist on this salad.
- Add more vegetables – try adding thinly-sliced carrot, sweet onion, red onion, green beans, or spinach.
- Use full-sized cucumber – 2 medium seedless cucumbers will work fine in place of the mini cucumbers.
- Adjust heat level – start with 1 tablespoon chili crisp and work your way up to taste if you would like a more mild salad.
Storing Salad
This salad stores well in refrigerator up to 4 days. It’s one of those salads that actually tastes better the longer it sits in that flavorful chili crisp dressing! For best results, I recommend waiting to add the peanuts and sesame seeds until just before serving so they maintain their crunch.

Peanut Chili Crisp Cucumber Salad

Ingredients
- 1/4 cup chili crisp
- 1 tablespoon honey or agave nectar
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons rice wine vinegar
- 9 mini cucumbers, sliced into 1/4-inch slices (or 2 medium seedless cucumbers)
- 3 mini sweet peppers, cored and thinly sliced
- 1/2 cup thinly-sliced green onions

I love a cucumber salad anytime of the year, but this one took me to a whole new level. The heat was perfect and the dressing refreshing. We had it with mango chicken skewers, but it could be pared with any main in my opinion.
