We’ve officially pulled out the grill for summer 2026 and there’s no turning back now! This salmon was the first casualty and wow, did we ever start things off with a bang.
I know, I know, we’re still firmly planted in spring but once the weather starts to feel like summer we pull out the grill, it’s as simple as that.
And can I just say, we’re starting with a BANGER of a recipe! Keeping things nice and easy with a simple salmon marinade that grills up in minutes and a fresh mango salsa on top that dials all the flavors up to a 10.

You can have this salmon on the table in less than an hour but wow, you sure wouldn’t guess it with all the flavor we’re able to pack into the zippy chili lime marinade and all that fresh salsa that gets piled to a pretty obnoxious amount over top the grilled salmon fillets.

Ingredients You Will Need

Choosing Your Salmon
You will need about 1-1/2 lbs of salmon for this recipe. I highly recommend buying a side of salmon and cutting into 3-4 uniform fillets rather than buying individual fillets.
I also recommend using skinless salmon for this recipe, but if you’re nervous about removing the skin from the delicate salmon fillets yourself, feel free to leave it on, grill it skin-side down to get it crispy, and serve with mango salsa.

Tips for Perfect Grilled Salmon
- Use fresh lime in marinade and salsa – you can’t beat the flavor fresh lime juice + zest contributes to this recipe.
- Rinse red onion – a quick rinse in cold water removes the extra bite from red onion.
- Marinate salmon 20 minutes – don’t let the salmon marinate any longer than 20 minutes otherwise the acidity from the lime juice will begin to cook the salmon.
- Flip salmon during marinating – this ensures that every inch of the salmon gets coated in the marinade.
- Grill salmon on nonstick tin foil – salmon is a very delicate fish and without the skin, it can easily stick to the grates if you put it straight on the grill. For easy flipping and removal, I recommend grilling salmon on a sheet of nonstick or greased tin foil.
- Use a kitchen thermometer to temp salmon – you’re aiming for an internal temperature of 125-130F for a tender, buttery interior.
Recipe Variations
Try these ideas for a different twist on this salmon.
- Adjust heat level – skip the jalapeno in the salsa for a mild flavor. Alternatively, try a spicier pepper like serrano or habanero for a higher heat level.
- Use another fruit in salsa – try pineapple or peaches in place of the mango.

Grilled Chili Lime Salmon with Mango Salsa

Ingredients
Mango Salsa
- 1 medium mango, peeled, pitted, and diced into 1/4-inch cubes
- 1 medium tomato, cored and diced into 1/4-inch cubes
- 1/2 cup minced red onion
- 1 medium jalapeno, minced
- 1 tablespoon minced fresh cilantro
- 1 tablespoon lime juice
- Salt and pepper to taste
Grilled Chili Lime Salmon
- 2 tablespoons vegetable oil
- Zest and juice from 1 medium lime
- 1-1/2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne powder (optional)
- Salt and pepper to taste
- 1-1/2 lbs skinless salmon fillets (about 3-4 fillets)
Instructions
Mango Salsa
- In a medium bowl, combine all salsa ingredients. Season salsa with salt and pepper to taste and store in refrigerator until ready to use.
Grilled Chili Lime Salmon
- In a large shallow bowl, whisk oil, zest, lime juice, and spices. Season sauce with salt and pepper to taste.
- Nestle salmon fillets into sauce and coat both sides. Allow salmon to marinate 20 minutes, flipping fillets halfway through marinating.
- Preheat an outdoor grill to 400F OR prepare a large nonstick pan to use indoors on stovetop by greasing well. Remove salmon from marinade and grill on a sheet of nonstick aluminum foil on outdoor grill or on stovetop until salmon registers 125-130F, about 7-10 minutes of cooking.
- Serve salmon warm with mango salsa spooned on top of each fillet. Enjoy!
