Hearty skillet dinners like this one have my whole heart this time of year! Don’t get me wrong, it’s still hot as heck here but there are little hints of fall in the air that are getting me SO excited for all the fall food.
So obviously, we’re gonna pre-game with a big ol’ skillet full of the fall works! We’ve got sweet potatoes, yellow potatoes, juicy sausage slices, a little leafy kale, and even some apples for a touch of sweetness here.

I simply adore a dinner you can make all in the same pan and yes, this is one of those meals! We’ll be sauteeing the veggies + sausage in batches and then it all comes together at the end with a little fresh garlic, rosemary, and mustard to form one king of a skillet dish.
Technically dinner material but I’ve totally eaten this one for breakfast before with zero regrets.

Choosing Your Sausage
I love using a lighter less-greasy sausage such as chicken or turkey, but this dish will work great with a variety sausage types. Kielbasa is one of my other go-to’s when we don’t have chicken or turkey sausage on hand.
I recommend buying sausage links and cutting them 1/2-inch thick circles for best results.

Tips for Sausage Skillet
- Cut vegetables into uniform size – aim for 1/2-inch cubes so all the vegetables cook at the same rate.
- Sear ingredients in batches – this might seem like extra work, but this cooking method helps ensure that everything will crisp up and cook evenly. First you’ll cook the sausage, then onion/apples/kale, and finally the potatoes.
- Use fresh garlic and rosemary – these ingredients contribute a lot flavor-wise.
Recipe Variations
Try these ideas for a different twist on this skillet.
- Try different veggies – sweet pepper, butternut squash, broccoli, or zucchini would be great additions to this skillet.
- Skip the meat – you can easily make this skillet vegetarian by replacing the meat with a meatless sausage or more veggies and potatoes.
- Try a different meat – you can replace the sausage with cooked chicken, brisket, or bacon bits.
Serving Suggestions
This skillet goes great with a fresh salad and some crusty bread slices. You can even serve it for breakfast with some eggs on the side!

It’s the little touch of sweet apple chunks that really make this skillet dinner something special! It’s hearty enough to keep everyone full for hours and you can even mix and match veggies depending on what you have in the house.

Fall Sausage Vegetable Skillet

Ingredients
- 4 tablespoons extra-virgin olive oil, divided
- 13 oz sausage, thinly sliced
- 1 medium yellow onion, cut into 1/2-inch cubes
- 2 medium apples, peeled and cut into 1/2-inch cubes
- 1-1/2 cups firmly-packed kale leaves
- 1 medium sweet potato, cut into 1/2-inch cubes
- 1/2 lb yellow potatoes, cut into 1/2-inch cubes
- Salt and pepper to taste
- 3 medium cloves garlic, minced
- 1 tablespoon whole-grain mustard
- 1 tablespoon minced fresh rosemary
Instructions
- Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil to pan and swirl to evenly coat. Add sausage in a single layer and sear 3-4 minutes, stirring occasionally until sausage is golden-brown. Transfer sausage to a bowl and set aside.
- Add 1 tablespoon olive oil to same pan over medium-high heat and swirl to coat. Add onion, apple, and kale and sauté 3-4 minutes until tender. Transfer to same bowl with sausage.
- Add remaining 2 tablespoons olive oil to same pan over medium heat and swirl to coat. Add sweet potatoes and yellow potatoes to pan, season with salt and pepper, cover pan and allow to cook on medium 5 minutes. Remove lid and flip potatoes to opposite side. Cover potatoes and cook an additional 4-5 minutes until potatoes are tender.
- Add garlic, mustard, and rosemary to potatoes and cook 1-2 minutes until fragrant. Toss sausage and onion/apple/kale mixture into skillet and season with additional salt and pepper to taste. Serve warm and enjoy!
