We’re fully on a fall app kick in this house and baked brie is making up roughly about 50% of that kick. Can ya blame a girl when there’s things like honey roasted apples hanging out in the same pan??

- Honey
- Lemon juice
- Rosemary
- Spices
- Brie cheese
- Pecans
- Crostini
Choosing Your Apples
This recipe works great with a variety of apples, but I typically go for a sweet, crisp apple such as honeycrisp, gala, Cortland, or Braeburn. Feel free to experiment with different kinds!

Tips for Perfect Baked Brie
- Cut the apples into uniform cubes – aim for 1/2-inch cubes so the apples cook evenly.
- Bake apples first – the apples will take longer to cook than the brie, so I roast them at 400F first for 10-15 minutes until crisp-tender.
- Reduce oven temperature – reduce the oven to 350F for baking the brie so as not to overbrown it.
- Add brie and bake 10-15 minutes – you’ll know the brie is done when the center is soft to the touch. This means the inside is melted.
- Top brie with additional honey for serving – once the brie is done, top with a few drizzles of additional honey for a little added sweetness.
Recipe Variations
Try these ideas for a different twist on this brie.
- Try a different cheese – goat cheese, boursin, or feta cheese would be an amazing swap-out for the brie. Be aware, you may need to adjust cook time slightly.
- Add another fruit – try adding a handful of fresh cranberries to the apples.
- Use maple syrup – swap out the honey for maple syrup.
- Skip the nuts – omit the pecans if you’re not a fan.

Serving Suggestions
We love serving this brie with homemade crostini or multi-grain crackers for dipping. It’s also amazing served alongside a glass of chilled rose or sauvignon blanc.
If you want to make your own crostini, here’s how I do it: slice a French baguette into thin slices and lay in a single layer on a greased sheet pan. Drizzle with a little olive oil and broil under high 2-3 minutes until toasted – flip slices and broil an additional 2-3 minutes on opposite side until golden-brown and crispy.

Honey Apple Baked Brie

Ingredients
- 1 lb (2-3 medium) honeycrisp or gala apples, peeled, cored, and diced into 1/2-inch cubes
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1 teaspoon minced fresh rosemary
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1 (8 oz) brie wheel
- 1/4 cup chopped pecans, toasted
- Additional honey for drizzling
- Crostini for serving
Instructions
- Preheat oven to 350F and lightly grease a square or round 9-inch baking dish. Toss apples, honey, lemon juice, rosemary, and spices until evenly coated. Arrange in a single layer in baking dish.
- Bake apples at 400F 10-15 minutes until apples are crisp-tender. Remove pan from oven and reduce oven temperature to 350F.
- Arrange brie wheel in the center of pan. Return pan to oven and bake an additional 10-15 minutes at 350F until brie is soft when center is lightly touched.
- Top brie and apples with toasted pecans and a few drizzles of additional honey. Serve warm with crostini for dipping. Enjoy!
