These ultimately-fudgy flourless almond butter brownies are nearly impossible to stop eating! They whip up easily in one bowl and each brownie only contains 125 calories!
So I stumbled upon yet another startling realization the other day…
It has been approximately 6 months and 4 days since my last brownie recipe. Guys, that’s 187 days brownie-less. It might as well be 2 million years.
And ugh, just writing that depresses me a LOT and makes me feel like eating all the brownies.
Make no mistake, I certainly have not been without brownies this entire time (this one in particular gets quite the workout) but new and exciting brownie recipes for y’all? Production has been slow and okaaaay, non-existent.
But you can’t be mad at me! The past few weeks I’ve been working on super-healthy stuff and you’ll be pleased to see that brownies made the cut.
And seeing how I’m an accredited brownie junkie, today just seems like the day to do it. Because obviously Friday and also the fact that today is said brownie junkie’s birthday.
Celebratory flourless brownies all around! ♥
Guys, can I just say that it feels extremely weird to now be in the final year of my teens? I know most of you are probably guffawing at me right now, but I can’t help it! 19 sounds old to me and that’s all there is to it.
Ugh, I’m probably going to have my mid-life crisis when I’m 25…
I like to keep my birthday pretty low-key around here so my only plans for today involve eating more brownies, drinking multiple lattes, and enjoying my night off from cooking while at the same time praying that the 16 year-old, the 14-year old and the 11-year old siblings don’t burn the house down trying to make dinner.
Yes, you can go ahead and call me a big bore because I know I totally am. I’m A-okay with that. 😉
Of course, if you wanted to send me cake I would definitely not have a problem with that.
Okay, now that we’ve got all that birthday business out of the way, let’s talk about flourless brownies. The reason all things are now right in Brownie World.
Allow me to lay out all the things absent from these brownies: No refined sugar, oil, dairy, grains, flour, or gluten in sight.
Only loooooots of brownie magic taking their place, and it starts with almond butter. The #1 source behind what makes these flourless brownies so awesomely fudgy, while at the same time takes the place of flour AND oil.
All hail, almond butter because HALLELUJAH, it keeps the calorie count per brownie only 125 calories!
Although…I’m not sure how much that brownie bonus point matters if a certain unspoken brownie junkie ends up eating the entire pan. I won’t mention any names.
Additional brownie bonus points? One bowl. One pan. —> 25 minutes later a one-way trip to your belly with all of them.
I too, like to test my brownie capacity limits. 😉
Birthdays were made for binging so I choose to binge on healthy flourless brownies all day and probably into the weekend.
These are going to blow your mind, friends. Have three on ME because, hello, it’s a birthday! 😉

One-Bowl Flourless Almond Butter Brownies
Ingredients
- 1/2 cup creamy almond butter
- 3/4 cup coconut sugar or brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup semisweet mini chocolate chips
Instructions
-
In a large bowl with a handheld electric mixer, beat almond butter and sugar on medium speed until creamy. Beat in eggs, vanilla, cocoa, baking soda, and salt until a smooth batter forms. Fold in chocolate chips.
-
Spread batter into a greased 12-in square baking pan and sprinkle with additional chocolate chips if desired. Bake brownies at 350F 18-20 minutes or until a toothpick comes out with moist crumbs sticking to it. (middle will appear underdone---this is ok!)
-
Cool brownies completely on a wire cooling rack. Once cooled. slice brownies into 16 squares and serve. Enjoy!

I’m so glad that you broke your no-brownie streak because these look amazing! You had me at one bowl and almond butter. Such a creative combo, Sarah! These look like the ultimate brownies too, and I love that they’re flourless! And I know that I would devour this entire pan with no shame. Yum!
Oh, there’s NO shame in devouring the whole pan! Because really, any smart person would. 😀 Thanks Gayle!
Delicious! I love flourless brownies, they are always so dense and fudgy!

It’s seriously mind-boggling to me too that there’s no flour in these! 😉 Thanks Jen!
HAPPY BIRTHDAY!!! Brownies all the way! I wish peanut butter would work for this recipe because just last night I threw out my jar of almond butter (cringe) since I didn’t know how long it’d been in the fridge and it tasted a little off. And I just opened a brand new jar of PB.
You could definitely use peanut butter in these brownies, Kathy! Most nut butters will work interchangeably. 😉
Oh good. I didn’t know since my almond butter is usually a thinner texture than peanut butter. I’ll give it a try. Thanks! Oh, and as a side note, it helps as you “age” to remember that EVERYONE is aging together, even a brand new baby is older by the next day 🙂 And you can also enjoy every age because by the time you hit 20, you can look back and say, Wow, wish I were 19 again! HA! Yes, we must incorporate these little tricks.
HAPPY BIRTHDAY!!! Hope it’s sooo wonderful 🙂 three cheers for flourless brownies! Almond butter is seriously magical and I bet it makes these so wonderfully fudgy. Totally trying these!

Happy Birthday girl!! And stop saying that 19 is old!! 😉 January must be food blogger birthday month because I turn 44 in a couple of weeks. Did you hear me: 44!! And you won’t hear me complaining. 🙂 Seriously, enjoy your young years because they don’t last forever. Now onto these brownies: They look amazing!! I can’t believe they are flour less because they look sinful!

Haha! Well, happy early birthday, Renee! You for sure don’t look 44, lady! Maybe 20-ish?? 😀
Yeah, that basically DOES sound like 2 million years. Now I’m wondering when my last brownie post was? Too long no doubt! And I hear ya on the feeling old. It’s all about perspective!! I’m 28 and feel old but just imagine how we will feel when we are 80! “We were babies!” haha. Happy birthday Sarah!
Yes! Waaay too long without brownies that’s for sure. 😉 Haha! Thanks for the sweet words, girlfriend! Happy weekend. xoxo
Happy Birthday! I totally get the hating birthdays thing, though. It started when I was really young too (like 14 maybe).
These brownies look wonderful — gooey and dark, what great way to celebrate

Haha noooo! 30 seems like so long away but I just know it’s gonna sneak up on me. LOL. Thanks Ashley!
Yum! can these be made in a 9×13 pan? I don’t have a 12″ square.
Hi Alexandra! You likely could bake these in a 9×13 pan, however you would need to reduce the baking time, and also be aware that the brownies would not turn out as thick as these look. 🙂
A 12″ square pan (144 sq. inches) would be larger than a 9×13 pan (117 sq. inches). Did you perhaps mean to say in your recipe that you used an 8 or 9 inch square pan?
Yes, an 8-in pan is correct, Susan!!
I am beyond amazed at how these a flour less and healthy! Its crazy that almond butter can take the place of flour in this awesome recipe! Amazing!

Can I leave out the cocoa powder?
Unfortunately, the cocoa powder is needed in this recipe.
I have a LOT of raw pecan butter, so I increased the nut butter to a full cup and added an extra egg. I also omitted the chips and used a 50/50 mix of sucralose and erythritol for “sugar.” They came out chewy and delicious, definitely saving to use again!
Happy to hear that you had success with these brownies, Shay! Thanks for letting me know!
Can’t wait to try these. Can you recommend other pan sizes? I don’t have a 12 inch square.
An 8×8 inch pan would work, Mollie!
At the top of the recipe it says serves 25, then at the end of the recipe it says to cut into 16 squares. How many servings is this? 25 or 16?
When i find recipe i want to try, i always look for reviews of people who actually tried the recipe, not just it looks good or looks delicious.
I have few recipes saved that i tried and decided to keep, this one is definitely a keeper. I love how soft fluffy they are not your topical wet compressed brownies. All my 4 kids from 3 to 12 year old approved it. I cut the coconut sugar to 2/3c instead of 3/4 and it was still plenty sweet. Thank you for this recipe!!!
Thank you so much! These were amazing. My kids approved and you would never notice they had no flour. Really surprised at how rich and chocolate tasting it was.
These are so good! When they first came out of the oven I was disappointed because they were super fluffy and cakey. However, after that cooled for a few hours they were perfect; moist, dense, and fudgy. This recipe is a keeper.
So glad to hear that these were a success, Melanie! Hope you enjoyed. 🙂
I thought these were tasty and easy to make. I used almond butter that was made from roasted almonds but I was wondering if you have ever made this with raw almond butter? Trader Joes carries both kinds now and I was wondering if it makes a difference in the results.
I’ve never tried these brownies with raw almond butter, however you can certainly try it!
