These ultimately-fudgy flourless almond butter brownies are nearly impossible to stop eating! They whip up easily in one bowl and each brownie only contains 125 calories!
So I stumbled upon yet another startling realization the other day…
It has been approximately 6 months and 4 days since my last brownie recipe. Guys, that’s 187 days brownie-less. It might as well be 2 million years.
And ugh, just writing that depresses me a LOT and makes me feel like eating all the brownies.
Make no mistake, I certainly have not been without brownies this entire time (this one in particular gets quite the workout) but new and exciting brownie recipes for y’all? Production has been slow and okaaaay, non-existent.
But you can’t be mad at me! The past few weeks I’ve been working on super-healthy stuff and you’ll be pleased to see that brownies made the cut.
And seeing how I’m an accredited brownie junkie, today just seems like the day to do it. Because obviously Friday and also the fact that today is said brownie junkie’s birthday.

Guys, can I just say that it feels extremely weird to now be in the final year of my teens? I know most of you are probably guffawing at me right now, but I can’t help it! 19 sounds old to me and that’s all there is to it.
Ugh, I’m probably going to have my mid-life crisis when I’m 25…
I like to keep my birthday pretty low-key around here so my only plans for today involve eating more brownies, drinking multiple lattes, and enjoying my night off from cooking while at the same time praying that the 16 year-old, the 14-year old and the 11-year old siblings don’t burn the house down trying to make dinner.
Yes, you can go ahead and call me a big bore because I know I totally am. I’m A-okay with that. 😉
Of course, if you wanted to send me cake I would definitely not have a problem with that.
Okay, now that we’ve got all that birthday business out of the way, let’s talk about flourless brownies. The reason all things are now right in Brownie World.
Allow me to lay out all the things absent from these brownies: No refined sugar, oil, dairy, grains, flour, or gluten in sight.
Only loooooots of brownie magic taking their place, and it starts with almond butter. The #1 source behind what makes these flourless brownies so awesomely fudgy, while at the same time takes the place of flour AND oil.
All hail, almond butter because HALLELUJAH, it keeps the calorie count per brownie only 125 calories!
Although…I’m not sure how much that brownie bonus point matters if a certain unspoken brownie junkie ends up eating the entire pan. I won’t mention any names.
Additional brownie bonus points? One bowl. One pan. —> 25 minutes later a one-way trip to your belly with all of them.

One-Bowl Flourless Almond Butter Brownies

Ingredients
- 1/2 cup creamy almond butter
- 3/4 cup coconut sugar or brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup semisweet mini chocolate chips
Instructions
- In a large bowl with a handheld electric mixer, beat almond butter and sugar on medium speed until creamy. Beat in eggs, vanilla, cocoa, baking soda, and salt until a smooth batter forms. Fold in chocolate chips.
- Spread batter into a greased 12-in square baking pan and sprinkle with additional chocolate chips if desired. Bake brownies at 350F 18-20 minutes or until a toothpick comes out with moist crumbs sticking to it. (middle will appear underdone---this is ok!)
- Cool brownies completely on a wire cooling rack. Once cooled. slice brownies into 16 squares and serve. Enjoy!

Oh good. I didn’t know since my almond butter is usually a thinner texture than peanut butter. I’ll give it a try. Thanks! Oh, and as a side note, it helps as you “age” to remember that EVERYONE is aging together, even a brand new baby is older by the next day 🙂 And you can also enjoy every age because by the time you hit 20, you can look back and say, Wow, wish I were 19 again! Yum! can these be made in a 9×13 pan? I don’t have a 12″ square.

Hi Alexandra! You likely could bake these in a 9×13 pan, however you would need to reduce the baking time, and also be aware that the brownies would not turn out as thick as these look. 🙂

A 12″ square pan (144 sq. inches) would be larger than a 9×13 pan (117 sq. inches). Did you perhaps mean to say in your recipe that you used an 8 or 9 inch square pan?
