You can easily swap out different cheeses, add meat, skip the tomatoes, the sky’s really the limit here!

Choosing Your Bread
This grilled cheese works with a variety of bread. I recommend going with a heartier loaf such as ciabatta, Italian, sourdough, or multi-grain.
Tips for Perfect Grilled Cheese
- Use pre-made or homemade pesto – this recipe works great with both. Obviously you’ll get a fresher herby flavor if you use homemade, but both work great in this grilled cheese.
- Salt and pepper tomatoes – this brings lots of flavor out of sweet tomato slices.
- Cook grilled cheese over medium heat – don’t be tempted to bump the heat up otherwise the outside of grilled cheese will burn before the cheese melts.
Recipe Variations
Try these ideas for a different twist on this grilled cheese.
- Make it meaty – add a few slices of deli turkey, roast beef, chicken, or bacon to grilled cheese.
- Add more veggies – try adding roasted red pepper strips, sauteed spinach, or mushrooms.
- Skip tomatoes – if you’re not a fan of tomatoes, just leave them out.
- Use a different cheese – this grilled cheese works well with a variety of cheeses – try white cheddar, asiago, swiss, provolone, or goat cheese.

Pesto Grilled Cheese

Ingredients
- 8 slices ciabatta or Italian bread
- 4 tablespoons unsalted butter, softened
- 1/2 cup basil pesto
- 8 slices fresh mozzarella
- 4 slices gouda cheese
- 1/4 cup grated Parmesan
- 2 medium tomatoes, thinly sliced
- Salt and pepper to taste
Instructions
- Place bread slices on a cutting board and butter each slice with softened butter. Place bread butter-side down on cutting board.
- Spread 1-2 tablespoons pesto on half of bread slices and begin layering mozzarella, gouda, and Parmesan on top of pesto. Top with tomato slices and season tomatoes with salt and pepper to taste.
- Working in batches, cook grilled cheese in a large nonstick skillet over medium heat 3-4 minutes per side until grilled cheese is golden brown and cheese is melted. Repeat cooking with remaining grilled cheese.
- Serve grilled cheese immediately warm and enjoy!
