These apple ricotta pancakes are the ultimate fall breakfast! Ricotta cheese gives them an incredible light and fluffy texture while sautéed apples and lots of spices give them the perfect touch of fall.

Stacks of fall heaven are all we know this time of year! Apple season is the best season and stacks like this masterpiece only further prove my point.
Not only are we giving apples their chance to shine in these pancakes but we’ve also got ricotta cheese coming in for duty and can I say, absolutely KILLING it??
The end result is pancakes with an incredible tangy flavor, impossibly fluffy texture, and tender spiced apples in every dang bite.

You won’t need more than a few minutes of your morning to pull off these pancakes making them perfect for a lazy weekend breakfast!
Don’t even get me started on how amazing they are alongside a mug of hot apple cider. I will scream that from the rooftops.

Ingredients You Will Need
- Unsalted butter
- Apples
- Ricotta cheese
- Egg
- Buttermilk
- All-purpose flour
- Brown sugar
- Spices
- Baking soda
- Kosher salt
- Maple syrup
Choosing Your Apples
I recommend using a sweeter apple for these pancakes such as honeycrisp, gala, pink lady, or Jonathon. Ideally, you want an apple that has a sweet, crisp flavor that will soften nicely when cooked.

Tips for Perfect Pancakes
- Sauté apples – cook the apples in a little bit of butter until softened before adding to pancake batter.
- Divide apples in half – fold half the apples in the batter so you have apples distributed throughout the pancakes and save the rest for topping.
- Spoon and level flour – I use the spoon-and-level technique for measuring flour as this will prevent over-measuring your flour. Use a spoon to scoop flour into the measuring cup, then level with the back of a knife.
- Use buttermilk – this gives the pancakes a rich and tangy flavor that pairs so well with the ricotta.
- Gently fold batter – use a light hand when mixing batter to prevent overmixing.
Recipe Variations
Try these ideas for a different twist on these pancakes.
- Use a different fruit – try using diced pears or peaches in place of the apples.
- Add caramel – skip the maple syrup and drizzle stacks of pancakes with caramel sauce instead.
- Make it nutty – fold 1/2 cup toasted chopped pecans or walnuts into the batter.

Apple Ricotta Pancakes

Ingredients
- 3 medium honeycrisp or gala apples, peeled and cut into 1/4-inch cubes
- 4 tablespoons unsalted butter, divided
- 3/4 cup ricotta cheese
- 1 large egg
- 2 cups buttermilk
- 2 cups all-purpose flour (spooned and leveled)
- 3 tablespoons packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- Melted butter for cooking
- Maple syrup for serving
Instructions
- Heat 1 tablespoon butter in a large skillet over medium-high heat. Add apples and sauté 5-8 minutes until apples are softened. Set aside.
- Melt remaining 3 tablespoons butter. In a large bowl, whisk melted butter, ricotta, egg, and buttermilk until smooth. In a separate medium bowl, combine flour, sugar, spices, baking powder, baking soda, and salt.
- Fold flour mixture into liquid until batter is just combined. Fold in half of sautéed apples. (batter will be thick)
- Preheat a large skillet or griddle over medium heat and lightly brush with melted butter. Working in batches, drop pancake batter by heaping 1/4 cupfuls onto hot skillet and allow to cook 2-3 minutes on each side until pancakes are golden brown. Repeat cooking method with remaining batter, adding more butter to skillet as needed.
- Serve pancakes warm with remaining sautéed apples and maple syrup on top for serving. Enjoy!

I’ve always heard people talking about ricotta pancakes, but for some reason I have never tried them before! That needs to change asappppp!
