Fluffiest-EVER. Because the simple words “fluffy” or even omg-i’m-gonna-die-from-the-yum doesn’t even come close to describing the perfection level of these pancakes.
It is quite possible that I may have fallen in love with a pancake. Disturbing? Nahhh…you guys probably understand me well enough by now to know that this is just totally normal. 🙂
I’ve recently decided that I am just not a morning person. In other words, if you speak more than a few words to me before I’ve had my coffee and oatmeal, I’m liable to get VERY grumpy with you.
As in, bite-your-head-off-grumpy. (are you scared yet?)
Maybe I just need more sleep or something?? I go to bed around 11 every night and get up at 6am on the dot. I know, I know that 7 hours should be plenty of sleep, but I’m one of those people who neeeeed a lot of sleep or I’ll die of grumpiness.
Lit-erally.
But you know what brings me outta that mood every.time. Pancakes. THESE —>
Wanna know how to make your family’s morning grumpy-less? These pancakes are the answer. To life. Pancakes are life, I mean.
A tall stack of hot pancakes dripping with maple syrup and butter is basically like the only thing that will lift my morning mood. That and 2 cups of coffee.
Maybe I just need to eat pancakes for breakfast EVERY morning. That way my family can avoid the wrath of Sarah the Bear.
We usually have Pancake Sunday only once a week (no, duh Sarah) but I’m considering instituting a Pancake Monday, Wednesday, and Friday too.
Pancakes every other day sounds about right to me.
Do you think my family would complain if I served ’em pancakes for dinner those days too? BRINNER!! (sorry, I just love that word)
I’ve been perfecting this buttermilk pancake recipe for over a year now, and my family has decided no more tweaking is necessary: They’re perfect-o.
No exaggerating either guys. They literally have the fluffiest, melt-in-your-mouth texture you’ll ever find in a pancake. Kinda resemble the texture of clouds. Okay, I’ve never tasted clouds before but you get it…
Everyone I’ve made these pancakes for agrees. And then they usually ask me my secret for how I get my pancakes so fluffy. Here’s the scoop guys…
Buttermilk. I’ve said it before, but I’ll say it again: It is kinda amazing how this slightly sour-tasting milk can instantly transform the texture any baked goods into something 10.5 million times more soft and fluffy.
That being said, there are no substitutes for the buttermilk in these pancakes—their texture won’t be the same at all if you use regular milk, and yes, I’ve tested it both ways.
Buttermilk WINS every time.
So you may be wondering about the whole “homemade pancake mix ‘thang” in the title. Yes, it’s true. You can make your own pancake mix and that means you can have pancakes even FASTER and more often.
You know, for whenever that random pancake craving hits. Please tell me that’s not just a Sarah-thing.
The mix for these pancakes is pretty basic: Throw some flour in a bowl. Whisk in some baking soda, baking powder (a whopping two teaspoons—high pancakes are a must!) salt, a little bit of sugar and voila! Your pancake mix is ready for that mason jar. Or, in my case it’s ready to be made immediately into pancakes.
FYI: Pancake mix may be stored at room temperature up to 1 month. YAY.
From here, all you have to add to the pancake mix is an egg, a few tablespoons of oil, and 2 cups of liquid gold.
‘Er, I mean buttermilk.
Whisk ‘er up, cook ‘er up, EAT ’em up! And don’t share. ↓
I went simple (gasp!) this time and just threw blueberries into my batter, but I’ve also experimented with adding chocolate chips, mashed banana, nuts, dried fruit, and even peanut butter to these pancakes before and the results were grooooooovy.
I mean, you just can’t go wrong with adding fun stuff to pancakes. Not possible. 😉

Fluffiest-Ever Buttermilk Pancakes

Ingredients
- PANCAKE MIX:
- 2 cups white whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons coconut sugar or brown sugar
- PANCAKES:
- 1 batch Pancake Mix
- 1 large egg
- 3 tablespoons vegetable oil
- 2 cups buttermilk
- Blueberries or add-in of your choice
- Maple syrup for serving
Instructions
- Prepare the pancake mix: In a large bowl, whisk flour, baking powder, baking soda, salt, and sugar. Store at room temperature in an airtight container.
- Prepare the pancakes: Place Pancake Mix in a large bowl and whisk in egg, oil and buttermilk until smooth. Fold in blueberries or add-in of your choice.
- Drop pancake batter by 1/4 cupfuls onto a greased hot skillet. Cook pancakes 1-2 minutes on each side or until golden. Serve pancakes warm with maple syrup.
