Talk about a cup of morning coffee’s best sidekick that makes me almost instantly crave another.

It’s no secret I love a good granola bar around here and that’s why I love to have a variety on my breakfast rotation! This banana chocolate version is perfect for when you have extra ripe bananas on the counter and just need a little extra breakfast indulgence.

Ingredients You Will Need
- Bananas
- Honey
- Peanut butter
- Coconut oil
- Vanilla extract
- Oats
- Cocoa powder
- Flaxseed
- Chia seeds
- Kosher salt
- Semisweet chocolate chips
Choosing Your Oats
These bars work best with quick-cooking oats because the fine texture eliminates the need for flour and produces a soft and chewy bar texture.
If you don’t have quick-cooking oats on hand, you can easily make them yourself. Pulse old-fashioned oats in a food processor several times until oats are partially-chopped.

Tips for Perfect Granola Bars
- Use ripe bananas – choose bananas that are spotted all over for the best flavor and texture.
- Bake bars in a 9-inch square baking dish – I found that this size yields the perfect thickness for the bars.
- Use parchment paper in pan – this will make it easy to remove the bars from the pan for cutting.
- Bake bars until firm – test the bars for doneness by touching the center. They are done when the texture is firm to the touch.
- Cool bars completely before cutting – make sure you wait for the bars to cool otherwise they will crumble apart during cutting.
Recipe Variations
Try these ideas for a different twist on these bars.
- Use another chocolate – try using dark chocolate chips in place of the semisweet.
- Add nuts – fold 1/4 cup finely-chopped toasted pecans, peanuts, or walnuts into the dough.
- Top bars – try a drizzle of melted dark or semisweet chocolate, white chocolate, or a powdered sugar glaze.
Storing and Freezing Bars
These bars store well in an airtight container at room temperature up to 4 days. You can enjoy them at room temperature or reheat 10-15 seconds in microwave for serving.
To freeze bars, allow to cool completely, store bars in a freezer-safe container, and freeze up to 2 months. Thaw bars at room temperature and serve within 4 days.

Double Chocolate Banana Granola Bars

Ingredients
- 2 medium ripe bananas, mashed (3/4 cup)
- 1/2 cup honey
- 1/2 cup creamy peanut butter
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 2-1/2 cups quick-cooking oats
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons flaxseeds
- 1 tablespoon chia seeds
- 1/2 teaspoon kosher salt
- 1/2 cup semisweet mini chocolate chips
- Additional banana slices for topping, optional
Instructions
- Preheat oven to 350F. Line a 9-inch square baking pan with parchment paper and set aside.
- In a large bowl, combine mashed bananas, honey, peanut butter, coconut oil, and vanilla until smooth. Add oats, cocoa, flaxseeds, chia seeds, salt, and chocolate chips and fold until dough is just combined.
- Firmly pack granola bar mixture into prepared baking pan and press a few banana slices on top if desired. Bake granola bars at 350F 20-25 minutes until bars are firm to the touch.
- Allow granola bars to cool completely on a wire cooling rack before slicing into bars. Enjoy!
