All spring diets are destined to fail today. By a SALAD, no less. That’s just how we roll around here with the diet-busting, ranch-stuffing salads.
Reading that back again honestly sounds a little wacky. I mean, am I really breaking your diet by a SALAD today?! Things are getting kind of weird around here.
Let’s start over. This is a salad. (no duh, Sarah) It’s filled with healthy grilled chicken, healthy greens, healthy veggies and healthy ranch dressing.
It’s just all the feel-good healthy stuff in one big ‘ol summer bowl of salad.
And it’s pretty freakin’ awesome. Boy, oh boy….bring on SUMMAH!
Now we must have a quick discussion about ranch dressing. Particularly the ranch dressing that we shall be using for today’s salad and probably should be using for every salad we make in the future. Avocado ranch dressing. Avocado RANCH dressing.
I’ll just be silent for a moment and let those words sink in.
Has your head stopped spinning yet? No? That’s A-OK, because as you probably figured out by now, I’M still trying to wrap my brain around this latest ranch dressing insanity. WHAT will Hidden Valley Ranch think of next?!
Oh, right. They also recently came up with cucumber, roasted garlic, and sweet chili ranch dressing. Am I obsessed yet? Pretty much.

So here’s the run-down on this salad, guys. First up, we’ve got the chicken business: We’re gonna dunk those chicken breasts in our avocado ranch and let ’em soak up all the ranch glory for a few hours. The longer they marinate = the BIGGER the ranch flavor.
It’s kinda a gorgeous sight too, obviously. *sigh*
Then we’re gonna slap ’em on the grill for a few minutes. Sizzle, sizzle!
Lord, help me….
Slice ’em up, taste-test a few of the “less-pretty” slices and toss those beauties into your chopped greens with a couple other fabulous components….
Pour dump drench on the extra portions of that epic ranch and…..
Face-ety faceplant for realz.
Friends, you really cannot even deny it that this salad is calling your name right now. I’m thinking you’ve got your lunch indecisiveness for today all figured out now, yes??
If not lunch, then definitely dinner and then you KNOW this would qualify as total health food.
Honestly, I don’t care either way. This salad is made solely of epic proportions, guys. And you’re going to love it a whoooooole lot.
I’ll break and let you in on a little secret: You’d love this salad even more if you poured MORE of that wicked-good ranch on your individual plate of already-dressed salad. And carefully place a little dollop in the corner of your plate “just in case.”

Ranch Grilled Chicken Chopped Salad

Ingredients
- 2 chicken breasts
- 1/2 cup Hidden Ranch Avocado Ranch dressing
- 4 cups chopped romaine lettuce
- 2 cups chopped spinach
- 1 large tomato diced
- 1 large sweet pepper diced
- 1 cup sugar snap peas
- 1 navel orange peeled and diced
- 1 avocado pitted and diced
- 1/2 cup pecans toasted
- 1/2 cup crumbled feta cheese
- Additional ranch dressing
Instructions
- Place chicken breasts in a medium bowl and pour ranch dressing over top. Place bowl in refrigerator and let chicken marinate 3-4 hours.
- Remove chicken from marinade and grill over medium-high heat, turning occasinally until juices in chicken run clear, about 10-15 minutes. Once chicken is cool enough to handle, slice chicken into bite-sized strips.
- In a large bowl, toss lettuce, spinach, tomato, pepper, snap peas, orange, avocado, pecans, feta cheese, and chicken until combined. Drizzle additional ranch over salad and toss to coat. Serve salad immediately.
