Friends, and fellow pumpkin-addicts: I present to you the weekend breakfast of your dreams. And yeah, I don’t take that term lightly: Remember these pancakes earlier this week? Same kinda dream deal.
CURRENTLY: French toast with glorious pumpkin and spices. And luscious cheesecake glaze drizzled into every nook and cranny. Like so much glaze.

Today’s french toast insanity is celebrating kiiiiinda an awesome event: A virtual fall baby shower for the uber-talented and amazing Megan from With Salt and Wit who’s having a little BOY next month! Congrats again, girl!

Right now, though we REALLY just need to get our weekend on in the french toasty-kinda way.
Are you one of those people who like, reaaaaally loves the whole concept and end results of weekend brunchin’, but seriously hates all the precious weekend time spent throwing it together? We should totally be friends, cause I’m exactly the same way!
I really just love eating brunch. Like 24/7 theend.e But the prep time? Uhh I prefer my pillow on the weekend, thanks.
The point in all this incoherent rambling? This french toast is the EASY of the peasy! It’s basically just whisk’n’dip’n’cook’n’glaze and swan dive into all the stacks.
I mean, you COULD wait for the rest of the family to roll out of bed and have a proper brunch, but honestly? The early bird gets the french toast and the morning slugs get the leftover crumbs.
Manners and pumpkin cheesecake french toast just do not mix. Sorry. 😉
Last mini-rant: pumpkin +cheesecake + french toast = for BREAKFAST. Excuse me while I go scream these good news to the world.

Pumpkin Cheesecake French Toast

Ingredients
- FRENCH TOAST:
- 4 large eggs lightly beaten
- 1/2 cup milk
- 1/2 cup pumpkin puree
- 1 tablespoon agave nectar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 8 slices day-old preferably stale bread
- CHEESECAKE GLAZE:
- 4 oz cream cheese softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 2-3 tablespoons milk
Instructions
- Make the french toast: Preheat a nonstick griddle to medium-high heat. In a shallow bowl, whisk eggs, milk, pumpkin, agave, spice, and vanilla until smooth. Dip both sides of bread, one at a time into egg mixture, then place on hot griddle. Cook french toast 3-4 minutes, flipping once to opposite side or until outside is golden. Transfer to serving plates and keep warm.
- Make the glaze: In a medium bowl, beat cream cheese, sugar, and vanilla until creamy. Gradually beat in just enough milk to make a drizzling consistency.
- Drizzle glaze over warm french toast and enjoy immediately!
