Roasted almonds, homemade caramel, and a good drizzle of dark chocolate come together in these dark chocolate almond clusters that whip up in minutes.

Are we all cookie-ed and generally all things sweet-ed out yet, guys? I’m absolutely not. My sweet tooth is running on ALL cylinders right now and I have no choice but to give it what it wants.
And that would currently be chocolate + caramel in the form of almond clusters.

If you’ve never tried your hand at homemade candy before this is a great recipe to start with! All we’re doing is making a basic homemade caramel sauce from scratch, draping it over roasted almonds and topping everything with a heavy drizzle of dark chocolate.
So easy you could make these in your sleep!

Making the Almond Clusters

Ingredients You Will Need
- Almonds
- Granulated sugar
- Unsalted butter
- Heavy whipping cream
- Kosher salt
- Dark chocolate

Tips for Perfect Almond Clusters
- Make homemade caramel – we love the amazing flavor the simple homemade caramel sauce gives these clusters. It comes together easily on the stovetop in only a few minutes.
- Use a candy thermometer for caramel – the caramel is done when it reaches 245F. This temperature is crucial for achieving caramel that will harden into a set candy once cooled.
- Arrange almonds in clusters – you will need 7-9 almonds per cluster.
- Pour caramel over almonds while warm – the caramel will begin to set fairly quickly so it’s important you pour it over the almonds while it’s still warm.
- Allow clusters to set 30 minutes – pop them in the fridge for about 30 minutes until the caramel and chocolate is set.
Recipe Variations
Try these ideas for a different twist on these clusters.
- Use another chocolate – try semisweet, milk, or white chocolate.
- Try another nut – try cashews, pecans, or walnuts. You can also use several different nuts in the same batch.
- Add dried fruit – arrange a few dried cranberries or raisins in with the almonds before pouring caramel over top.
Storing the Clusters
Once the caramel and chocolate has fully set, transfer the clusters to an airtight container and store them between wax paper at room temperature up to 1 week.
I do not recommend freezing these clusters as that will negatively affect the texture of the caramel and almonds.

A plate of these almond clusters is pretty much an empty plate, take it from me! No one can resist the silky caramel, the rich drizzles of salty dark chocolate, and all those crunchy almonds hanging out underneath.

Dark Chocolate Almond Clusters

Ingredients
- 1 cup lightly salted roasted almonds
- 1/2 cup granulated sugar
- 3 tablespoons unsalted butter, softened
- 1/3 cup heavy whipping cream
- 1/4 teaspoon kosher salt
- 1/2 cup chopped dark chocolate, melted
- Flaky salt for topping
Instructions
- Line a large sheet pan with parchment paper. Arrange almonds in clusters of 7-9 almonds 1-inch apart on sheet pan. Set aside for a moment.
- Place sugar in a medium heavy-bottomed saucepan over medium heat and allow to melt, stirring frequently until all sugar crystals are melted. Once melted, whisk in butter and bring to a boil. Slowly add cream (carefully, it will splatter) whisking constantly and allow caramel to cook until caramel registers 245F on a candy thermometer, about 3-5 minutes. Remove caramel from heat and mix in salt.
- Spoon about 1 tablespoon warm caramel sauce over each almond cluster, making sure almonds are evenly covered in caramel. Drizzle melted dark chocolate over each cluster and top with a pinch of flaky salt.
- Allow clusters to set in refrigerator 30 minutes before serving. Enjoy!
