Embarrassingly (at least for me) this potato salad is freakishly good enough that you really don’t need any extras. I take a few extra steps to ensure the best flavors and it’s WORTH it.
Look how creamy and tell me this isn’t screaming breakfast right now.
We’ll start by roasting the potatoes with olive oil + minced garlic + salt and pepper. I prefer to roast my potatoes for salads rather than boiling them because it keeps the flavors around.
Next/last step is to take 30 seconds and whip up a homemade chive ranch dressing and pour it all over those bad boys.
Eating potato salad straight out of the bowl is traditional right? That’s the impression I got anyways.
Roasted Potato Salad with Chive Ranch Dressing

Ingredients
- 2 lbs russet potatoes quartered
- 2 tablespoons olive oil
- 3 cloves garlic minced
- Salt and pepper to taste
Dressing:
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 3 tablespoons minced fresh chives
- 2 teaspoons onion powder
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- On a baking sheet, toss potatoes with olive oil, garlic, and salt and pepper to taste. Spread in an even layer. Roast potatoes at 400F 20-25 minutes or until potatoes are tender. Remove from oven and cool.
- In a large bowl, whisk dressing ingredients until smooth. Add cooled potatoes to dressing and toss until coated. Season salad with salt and pepper to taste and chill until ready to serve. Enjoy!
