Pineapple Pecan Chicken Salad Lettuce Wraps

Ingredients
- 1/4 cup mayonnaise
- 2 tablespoons pineapple juice
- 1 tablespoon dijon mustard
- 2 cups cooked diced chicken
- 1 cup canned pineapple tidbits
- 1 small sweet pepper finely diced
- 1 clove garlic minced
- 2 tablespoons minced fresh parsley
- 1/3 cup toasted pecans
- Salt and pepper to taste
- 6 Bibb lettuce leaves
Instructions
- In a medium bowl, stir mayonnaise, pineapple juice, and mustard until smooth. Add chicken, pineapple, pepper, garlic, parsley, and pecans and stir until coated. Season chicken salad with salt and pepper to taste.
