Melt-in-your-mouth pan-seared salmon is covered in an INSANELY flavorful roasted red pepper sauce for a quick, flavor-packed dinner! Serve it over rice or noodles.
Can I even describe the love affair I’m having with this roasted red pepper alfredo sauce right now??
Suffice to say, it’s getting dumped on all the things. And today it’s hanging out with pan-seared salmon, woohoo!
Okay, so this is pretty much the first time I’ve ever done seafood with a creamy sauce, guys. I donno, for some reason it always just seemed kinda weird to me to combine creamy + fish.
Let the record show that super-duper creamy and kick-yourself-flavorful roasted red pepper alfredo sauce does in fact pair GLORIOUSLY with pan-seared salmon. Holy cow…..
P.S. EASY-PEASY is the name of the game for this whole skillet of dinner goodness. I’m talking 20 minutes, guys. Check it out >>>
- Salmon. Pat a few salmon fillets dry and lightly season both sides with the basics which is salt and pepper. Heat your skillet with a little butter and a little olive oil and sear those bad boys on both sides for a few minutes. That’s all!
- Sauce. Wipe your skillet clean and make a simple alfredo sauce of butter + flour, milk, cream, etc. Cook until slightly thickened then it’s into the blender with the sauce + roasted red peppers. Give it a whirl until creamy then dump it back into the skillet.
Nestle your gorgeous little salmon fillets in amongst the sauce and make sure EVERY FREAKING INCH gets covered. Dinner is golden, guys. ???
Seriously. If you think you’re a salmon hater, you absolutely-freaking-must-make-this. I swear the sauce just pulls everything together into a perfect little seafood package.
You can eat this salmon straight outta the skillet or serve it over rice or noodles, whatever you fancy!!
