Lime Sugar Cookies with Coconut Frosting

Ingredients
Lime Sugar Cookies
- 1/2 cup butter, softened
- 3/4 cup coconut sugar (or brown sugar)
- 1 large egg
- 2 teaspoons vanilla extract
- 1/4 cup freshly-squeezed lime juice
- 1 tablespoon grated lime zest
- 1-1/2 cups white whole wheat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Coconut Frosting
- 1/4 cup butter, softened
- 3/4 cup powdered sugar
- 2 teaspoons vanilla extract
- 1-2 tablespoons half and half cream
- 1/3 cup flaked sweetened coconut
- Additional flaked coconut and grated lime zest for topping
Instructions
Lime Sugar Cookies
- Preheat oven to 350F. Line two baking sheets with parchment paper and set aside.
- In a large bowl, beat butter and sugar together until completely creamy. Beat in egg, vanilla, lime juice, and zest until smooth. Combine flour, baking powder, and salt. Beat flour mixture into liquid until a soft dough forms. Scoop dough into 1-in balls and place 1-in apart on prepared baking sheets.
- Bake cookies at 350F 9-10 minutes or until edges just begin to brown. Allow to cool on baking sheet 5 minutes, then transfer to a wire cooling rack.
Coconut Frosting
- In a medium bowl, beat butter and sugar together with handheld electric mixer until completely smooth and creamy. Add vanilla and cream by the tablespoon until a smooth, spreadable consistency. Fold in flaked coconut.
- Frost cooled cookies using an offset spatula and garnish cookies with additional flaked coconut and lime zest. Enjoy!
