It’s high time we did a summer cocktail! And boy, do these beautiful bourbon smashes ever deliver.
We’ve got peaches and rhubarb covering all our summer bases with a little bourbon snuck in there for that kick our Thursday definitely needs.
Really though, how GLORIOUS are these cocktails?? They’re literally dripping with summer.
Jason and I have officially adapted these smashes as our cocktail of summer 2021.
Don’t even ask how many of these we’ve made in the last few weeks, but let’s just say they have been tried and tested to the fullest extent.

- Spicy, kickin’ bourbon
- Tangy homemade rhubarb simple syrup
- Plenty of fresh lime + mint
- A few splashes of club soda for a little bubbly kick
Making the Rhubarb Peach Bourbon Smash

Ingredients You’ll Need
- Rhubarb
- Sugar
- Peaches
- Mint
- Lime
- Bourbon (whiskey or a good spiced rum would also be delicious!)
- Club soda
Tips for Perfect Bourbon Smash
- Make your own syrup – homemade syrups really make a difference flavorwise in drinks! We’re making a simple rhubarb syrup for this drink that’s sweet, tangy, and a beautiful shade of pink.
- Use ripe, juicy peaches – the riper the better for this drink! You will want to peel/pit your peaches and roughly chop them.
- Buy a high-quality bourbon – we all know that bad bourbon can break a drink and lead to a uh, less than pleasant experience. My best advice is to go for a middle-to-top shelf bourbon.
- Use fresh lime and mint – muddling the cocktail with fresh lime wheels and mint leaves adds so much flavor!
- Make cocktails one at a time – smashing these cocktails can be a bit labor intensive, but it’s much easier if you make them one at a time. If you have more than one cocktail shaker, feel free to employ a buddy to tag team the smashing process.
- Strain the cocktails – this step is necessary to getting a smooth cocktail. Sometimes we even double-strain it to eliminate any trace of solids.
- Serve cocktails over ice and top off with club soda – pour the strained cocktail over ice, then fill each glass to the top with club soda to add a little bubbly kick to the drink. Stir well with a cocktail spoon.
Make Ahead Instructions
- Make the rhubarb syrup and store in refrigerator up to 1 week.
- Muddle the cocktail through step 2, but do not strain over ice. Instead, strain into several mason jars and store in refrigerator up to 2 days.
- When ready to serve, pour cocktail over ice and top off with club soda.
How to Make Virgin Cocktail
It’s very easy to make a virgin version of these cocktails! Simply swap out the bourbon for your favorite fruit juice.

Rhubarb Peach Bourbon Smash

Ingredients
Rhubarb Simple Syrup
- 2 cups fresh (or frozen and thawed) rhubarb, diced into 1/2-in cubes
- 1/2 cup granulated sugar
- 1/2 cup water
Rhubarb Peach Bourbon Smash
- 4 medium ripe peaches, peeled, pitted and roughly chopped
- 1/2 cup lightly-packed mint leaves
- 1 medium lime, thinly sliced
- 8 oz bourbon
- Ice for shaking
- 8-12 oz club soda for serving
- Additional peach slices, lime wedges, and mint leaves for garnishing
Instructions
Rhubarb Simple Syrup
- In a medium saucepan over medium heat, bring rhubarb, sugar, and water to a simmer. Reduce heat to medium-low and allow to gently simmer 15-20 minutes until fruit is softened and liquid is slightly reduced.
- Place a coffee filter or cheesecloth in a fine-mesh strainer set over a medium bowl. Strain syrup until nearly all of the liquid is strained through. Discard solids and cool syrup. (syrup may be stored in fridge up to 1 week)
Rhubarb Peach Bourbon Smash
- Working in batches, place one chopped peach, a few mint leaves, and 1-2 lime slices in a cocktail shaker. Muddle mixture with a cocktail muddler (or just smash it with the back of a wooden spoon) until juices are released.
- Add 2 oz bourbon and 1 oz cooled rhubarb syrup to cocktail shaker and fill shaker with ice. Shake cocktail well until condensation begins to form on outside. Strain cocktail into a glass filled with ice. Repeat muddling, shaking, and straining for remaining three cocktails.
- Once all the cocktails are strained over ice, top each glass off with 2-3 oz club soda and stir well with a cocktail spoon. Serve smashes immediately and enjoy!
