Plus it helps you utilize all the summer tomatoes that are so great right now! I teased earlier in the week that we were all about the tomatoes this week and this pork loin is chock full of ’em.
Also, spoiler alert: it may just be the best way you’ll ever do up a pork loin.

You certainly don’t need to be a grill master to pull off this pork loin! It’s really so simple to cook up and I walk you through each and every step that leads to a perfectly grilled pork loin.
The not-so-secret weapon here is, of course, the marinade! A simple balsamic marinade infuses so much flavor into the pork and will help it cook up insanely juicy. No dry pork allowed around here!

- Olive oil
- Honey
- Dried oregano

Choosing Your Pork Loin
I recommend going with a boneless 2 lb pork loin for this recipe. This is the perfect size for marinating and grilling as it soaks up lots of flavor from the marinade and grills up quickly.
To prep the pork loin for marinating, trim an excess fat on the outside of loin and pat dry before submerging in marinade.

Tips for Perfect Grilled Pork Loin
- Marinate pork at least 2 hours – a good rule of thumb with marinating is 2 hours if you’re in a hurry and up to 12 if you’ve got some extra time.
- Marinate pork on bottom shelf of fridge – it’s always a good idea to keep raw meats away from fresh produce and on the bottom shelf of your fridge to reduce risk of cross contamination.
- Grill pork at 375F – this is the ideal temperature for cooking pork on the grill as it will allow for the pork to cook fully without the outside getting excessively charred.
- Use a kitchen thermometer to temp pork while cooking – you’re aiming for an internal temperature of 135F. Do not go over 135F otherwise your pork will dry out.
- Allow pork to rest before carving – letting the pork rest 10 minutes before slicing will keep all the juices locked inside.
- Use fresh garlic and basil in bruschetta topping – using these ingredients fresh adds so much flavor!
- Add a pinch of sugar to tomatoes – this cuts down on the acidity a bit and brightens up the tomato flavor.
Recipe Variations
Try these ideas for a different twist on this pork.
- Add heat to bruschetta topping – add red pepper flakes or your favorite hot sauce for a little kick of heat.
- Use steak or chicken in place of pork – this recipe will work also great with steaks or chicken thighs/breasts. Be aware that cook time will vary depending on the protein you use.
- Add cheese – top pork slices with a slice of fresh mozzarella before topping with bruschetta topping.
Oven Instructions
Don’t have a grill? No problem! This recipe can easily converted to an oven version.
Preheat oven to 375F and heat a little vegetable oil in a large oven-safe skillet over medium-high heat. Add pork loin to skillet and sear on all sides until golden brown.
Transfer skillet to the oven and allow pork to cook 5-10 minutes until a kitchen thermometer inserted in the thickest part registers 135F.

Ingredients
Grilled Pork
- 1/3 cup balsamic vinegar
- 1/4 cup olive oil
- 1 tablespoon honey or agave nectar
- 1 teaspoon dried oregano
- 3 medium cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 lbs boneless pork loin
Bruschetta Topping
- 3 medium ripe tomatoes, diced into 1/4-inch cubes
- 2 medium cloves garlic, minced
- 1-1/2 teaspoons granulated sugar
- 1/4 cup minced fresh basil
- Kosher salt and pepper to taste

Instructions
Grilled Pork
- In a medium bowl, whisk balsamic vinegar, olive oil, honey, oregano, garlic, salt, and pepper until smooth.
- Place pork loin in a sealable bag and pour marinade over top. Seal bag and allow pork to marinate in refrigerator 2 hours or up to 12 hours, tossing pork around in marinade occasionally to evenly coat.
- When ready to grill, preheat grill to 375F. Remove pork from marinade and discard marinade. Pat pork loin dry and place on preheated grill. Turn pork occasionally until it reaches an internal temperature of 135F, about 10-15 minutes of cooking.
- Remove pork from grill and place on a cutting board. Lightly tent with foil and allow to rest 10 minutes before carving. Once pork has rested, cut into slices and arrange on a serving plate.
Bruschetta Topping
- While the pork is marinating (or resting) make the bruschetta topping. In a medium bowl, combine tomatoes, garlic, sugar, and basil. Season with salt and pepper to taste.
- Spoon bruschetta topping over pork loin slices and top with a good drizzle of balsamic glaze. Serve pork loin immediately and enjoy!
