This is such a simple chicken dinner but it’s one of those dinners that you can feel dang good about because YEP, we’re making the tomato sauce from scratch and it is absolutely bomb.
You won’t need any fancy ingredients or cookware to pull it off either! Simple is the name of the game today and this chicken will quickly land a spot on the permanent dinner rotation because of that.
And the fact that it’s dang delicious and dare I say, way better than most Italian food places?? It’s the fire roasted tomatoes, y’all, they do a magical thing here.

Ingredients You Will Need
- Tomatoes
- Olive oil
- Italian seasoning
- Red pepper flakes
- Chicken breasts
- Unsalted butter
- Shallot
- Garlic
- Chicken broth
- Tomato paste
- Heavy whipping cream
- Angel hair pasta
- Basil
Choosing Your Tomatoes
This recipe works great with a variety of tomatoes! I typically go for a smaller sweet tomato such as romas, but this recipe also works well with on-the-vine tomatoes or heirlooms.
To prep the tomatoes for roasting, remove the stems and cut tomatoes in half (or in quarters if using a larger tomato).
Tips for Perfect Fire Roasted Tomato Chicken
- Roast tomatoes at 450F – this high temperature will slightly char the tomatoes adding lots of flavor.
- Remove skins and finely chop tomatoes – the skins should easily peel off the tomatoes and a quick chop gets them ready for the sauce.
- Pan sear chicken breasts – this starts the cooking process for the chicken and builds a flavor base for the sauce.
- Sauté aromatics for sauce – cook the shallot and garlic in pan drippings until fragrant.
- Simmer chicken in sauce – bring the tomatoes, tomato paste, and heavy cream to a simmer and nestle the chicken in pan. Cover and allow to simmer 10-15 minutes to finish cooking the chicken and reduce the sauce.

Try these ideas for a different twist on this chicken.
- Adjust heat level – if you don’t like spice, simply omit the red pepper flakes. Alternatively, if you want a spicier sauce, start with 1/4 teaspoon red pepper flakes and work your way up from there.
- Use meatballs – skip the chicken and instead simmer meatballs in the tomato sauce.
- Make it vegetarian – skip the chicken entirely and use the sauce as a meat-free pasta sauce.

Creamy Fire Roasted Tomato Chicken

Ingredients
Fire Roasted Tomatoes
- 3 lbs roma (or other medium-sized) tomatoes, halved
- 2 tablespoons extra-virgin olive oil
- 2 teaspoons dried Italian seasoning
- 1/4 to 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Chicken and Sauce
- 4 medium boneless skinless chicken breasts (about 1-1/2 lbs)
- Salt and pepper to taste
- 1 tablespoon unsalted butter
- 2 tablespoons extra-virgin olive oil, divided
- 1 small shallot, minced
- 3 medium cloves garlic, minced
- 1/2 cup chicken broth
- 2 tablespoons tomato paste
- 1/2 cup heavy whipping cream
- Angel hair pasta and fresh basil for serving
Instructions
Fire Roasted Tomatoes
- Preheat oven to 450F and line a large sheet pan with parchment paper.
- Arrange tomatoes cut-side up on sheet pan, drizzle with olive oil, and top with Italian seasoning, red pepper flakes if using, and salt and pepper to taste.
- Roast tomatoes at 450F 40-45 minutes until tomatoes are charred and softened. Allow to cool slightly, then remove skins and discard. Finely chop tomatoes and set aside.
Chicken and Sauce
- Season chicken on both sides with salt and pepper to taste. Heat butter and 1 tablespoon olive oil in a large skillet over medium-high heat until melted and hot. Place chicken breasts in pan and sear 3-5 minutes on both sides until golden brown. Transfer chicken to a plate.
- Add remaining 1 tablespoon olive oil to pan drippings over medium-high heat and swirl to coat pan. Add shallot and saute until tender. Add garlic and cook 1 additional minute until fragrant. Add chicken broth to pan and scrape up any browned bits with a wooden spoon.
- Add fire-roasted tomatoes, tomato paste, and heavy cream to pan and bring to a simmer, smashing tomatoes against pan with a wooden spoon to release juices.
- Nestle chicken into sauce, cover pan, reduce heat to medium-low, and allow to simmer 10-15 minutes until chicken registers 165F and sauce is slightly reduced. Season sauce with salt and pepper to taste if needed and serve warm over pasta with fresh basil. Enjoy!
