- Olive oil
- Ground Italian sausage
- Yellow onion
- Mushrooms
- Garlic
- Thyme
- Spinach
- Mozzarella cheese
How to Bake Sweet Potatoes
I recommend choosing medium sweet potatoes for this recipe. Wash sweet potatoes well, pat dry, arrange in a single layer in a baking dish, and prick all over with a fork so the sweet potatoes can release steam while the bake.
Bake the sweet potatoes at 400F 55-60 minutes until a fork can go through sweet potatoes without any resistance. Allow sweet potatoes to cool slightly, then split open and fluff up interior with a fork.

Tips for Perfect Stuffed Sweet Potatoes
- Season interior of baked sweet potatoes – don’t forget this part! This is the base of the meal and we want it flavorful.
- Use fresh garlic and thyme – these ingredients add lots of aromatic flavor to the filling.
- Broil cheese on top – 2-3 minutes under high will brown and melt the cheese perfectly.
Recipe Variations
Try these ideas for a different twist on these sweet potatoes
- Try another meat – try ground chicken, turkey, or beef in place of the sausage.
- Hold the meat – skip the meat and add more mushrooms in its place.
- Use another cheese – try melting cheddar, swiss, provolone, or gouda on top of sweet potatoes.
- Make it spicy – use spicy Italian sausage and add cayenne pepper to the filling to taste.
Make-Ahead Tips
- Bake sweet potatoes – bake the sweet potatoes according to recipe instructions and store in refrigerator up to 6 days. Reheat before stuffing with filling either in a 350F oven 15-20 minutes or in microwave on high 2-3 minutes.
- Make filling – assemble the filling and store in refrigerator up to 6 days. Reheat on stovetop over medium heat before serving.
- Assembly – when ready to assemble, stuff warmed sweet potatoes with warmed filling and broil cheese on top.

Mushroom Sausage Stuffed Sweet Potatoes

Ingredients
- 4 medium sweet potatoes
- 1 tablespoon olive oil
- 1/2 lb ground Italian sausage
- 1 small yellow onion, finely diced
- 6 oz mushrooms, thinly sliced (buttons, shiitakes, oysters, etc.)
- 2 medium cloves garlic, minced
- 1 teaspoon minced fresh thyme
- 1-1/2 cups firmly-packed baby spinach
- Salt and pepper to taste
- 1 cup shredded low-moisture mozzarella cheese
Instructions
- Preheat oven to 400F. Place sweet potatoes in a greased baking dish or sheet pan and prick several times with a fork. Bake sweet potatoes at 400F 55-65 minutes until tender when pierced with a fork. Set aside to cool.
- Heat olive oil in a large skillet over medium-high heat. Add Italian sausage and onion and break up over medium-high heat until meat is no longer pink. Add mushrooms and cook 3-4 minutes until tender. Add garlic, thyme, and spinach and cook until spinach is wilted. Remove pan from heat and season with salt and pepper to taste.
- Use a fork and knife to split each sweet potato open and fluff up inside. Season sweet potato interior with salt and pepper to taste. Fill each sweet potato with about 3/4 cup sausage filling and top with mozzarella cheese.
- Broil sweet potatoes under high heat 2-3 minutes until cheese is melted and lightly browned. Serve sweet potatoes warm and enjoy!
