Breakfast of champs doesn’t even come close to describing the goodness we’re tackling today! Meet my current breakfast obsession.
The story of these sandwiches started a couple months ago when I had breakfast sandwich similar to this on a ski trip with my husband and ever since then I haven’t been able to stop thinking about it.
This restaurant’s version had thick slices of house-smoked salmon served open-face style with lots of capers and fresh dill piled on top of toasted bagels. I decided to take things up a notch when recreating it myself and throw some goat cheese spread into the party and make it messy sandwich style.

And a party indeed is what we have before us here. These sandwiches are absolutely LOADED down with the works, but yet it tastes light at the same time and won’t give you a greasy breakfast food hangover like a typical breakfast sandwich usually does.

Choosing Your Sandwich Base
This breakfast sandwich works great with a variety of bread. You can use my suggested English muffins, bagels, sourdough bread, whole wheat bread, ciabatta, etc.

Tips for Perfect Breakfast Sandwich
- Use fresh herbs, garlic, and lemon zest in goat cheese – using these ingredients fresh adds an unmatchable flavor to the goat cheese spread.
- Salt tomato slices – a light sprinkle of salt brings a lot of flavor out of the tomatoes.
- Cook eggs over-easy or over-hard – I recommend cooking eggs over-easy if you like a runny yolk or over-hard if you want a less-messy breakfast sandwich.
- Toast English muffins for sandwich – don’t forget to toast your bread base before assembly.
- Assemble sandwich just before serving – these breakfast sandwiches don’t store the best so make sure you assemble them only just before serving.
Recipe Variations
Try these ideas for a different twist on these sandwiches.
- Use another protein – try turkey, chicken, or pork sausage or bacon strips.
- Try different fresh herbs – fresh basil, tarragon, or chives work great in place of the parsley and dill.
- Swap out the goat cheese – use cream cheese or Neufchatel in place of the goat cheese.

This really is a breakfast sandwich fit for king! The smoky salmon works wonders with the rich goat cheese spread, silky avocado slices, and those tangy capers on top. A little runny egg action just takes them completely over the top.
Beware, these are messy but so absolutely worth it.

Goat Cheese Smoked Salmon Breakfast Sandwich

Ingredients
Herbed Goat Cheese Spread
- 4 oz fresh goat cheese
- 1/2 tablespoon minced fresh parsley
- 1/2 tablespoon minced fresh dill
- 1 medium clove garlic, minced
- 1 teaspoon grated lemon zest
- Salt and pepper to taste
Breakfast Sandwich
- 1 medium tomato
- Salt and pepper to taste
- 1 tablespoon unsalted butter
- 4 large eggs
- 4 English muffins or bagels, toasted
- 4 leaves butter lettuce
- 1 medium avocado, thinly sliced
- 8 oz smoked salmon, sliced into 4 portions
- 1/4 cup jarred capers, drained
- Additional fresh herbs for topping
Instructions
Herbed Goat Cheese Spread
- In a medium bowl, combine all spread ingredients until creamy. Season with salt and pepper to taste and store spread in refrigerator until ready to use.
Breakfast Sandwich
- Slice tomato into thin slices and blot dry with paper towels. Season tomatoes with salt to taste.
- Melt butter in a large nonstick skillet over medium heat. Add eggs and cook over-easy or over-hard style until set. Season eggs with salt and pepper to taste and remove from pan.
- Arrange bottom halves of toasted English muffins or bagels on a cutting board. Layer each with a lettuce leaf, avocado slices, tomato slices, egg, smoked salmon, and capers. Garnish top with additional fresh parsley or dill.
- Spread goat cheese spread in an even layer over each remaining toasted bread half and place on top of sandwiches. Serve breakfast sandwiches immediately and enjoy!
