Your brunch game just got a pretty major new addition! While I wouldn’t usually think of sliders as brunch material, these croissant sliders fit the bill perfectly.
They’re coming stuffed with no shortage of ham, gruyere, and honey mustard and 100% something I would make a meal out of alongside a mimosa.

And yes, they are easy as HECK to pull off and you won’t need more than a few minutes prep time! I even include instructions to prep the whole pan in advance so you can pop them in the oven whenever ya fancy.

Ingredients You Will Need
- Mini croissants
- Dijon mustard
- Whole grain mustard
- Honey
- Mayonnaise
- Chives
- Deli ham
- Gruyere cheese
- Unsalted butter
- Poppy seeds
- Garlic powder

Tips for Perfect Croissant Sliders
- Hand-shred gruyere – this will melt much better in the sliders than pre-shredded cheese.
- Make homemade honey mustard – a simple mixture of two kinds of mustard, honey, mayonnaise, and chives adds tons of flavor to the sliders.
- Bake sliders covered for 15 minutes – covering the sliders will prevent them from overbrowning. Remove the foil after 15 minutes and bake an additional 5-10 minutes to crisp up the exterior.
Recipe Variations
Try these ideas for a different twist on these sliders.
- Use another meat – deli chicken, turkey, or roast beef will all work in place of the ham.
- Try another cheese – try white cheddar, gouda, or mozzarella.
- Swap in another fresh herb – try rosemary, parsley, or dill in place of the chives.
Make Ahead Instructions
These sliders can be assembled through Step 3, covered with foil, and refrigerated up to 2 days before baking. Allow to come to room temperature for 30 minutes before baking according to recipe instructions.

Gruyere Ham and Cheese Croissant Sliders

Ingredients
- 12 mini croissants, split
- 12 slices deli ham
- 1 tablespoon Dijon mustard
- 1 tablespoon whole-grain mustard
- 1 tablespoon honey or agave nectar
- 1 tablespoon mayonnaise
- 1 tablespoon minced fresh chives
- Salt and pepper to taste
- 1-1/2 cups shredded gruyere cheese
- 1 tablespoon unsalted butter, melted
- 1/2 teaspoon poppyseeds
- 1/4 teaspoon garlic powder
Instructions
- Adjust oven rack to middle and preheat oven to 375F. Lightly grease a 9×13 baking dish, arrange croissant bottom halves in baking dish, and top with ham slices. Set aside for a moment.
- In a small bowl, whisk mustards, honey, mayonnaise, and chives. Season sauce with salt and pepper to taste and brush in an even layer over ham slices. Top with gruyere and top halves of croissants.
- In a small bowl, whisk butter, poppyseeds, garlic, and salt and pepper to taste. Brush butter mixture evenly over croissants and cover pan with foil.
- Bake sliders at 375F 15 minutes then remove foil and continue baking an additional 5-10 minutes until sliders are golden-brown and cheese is melted. Serve sliders warm and enjoy!
