Sweet, jammy homemade blackberry compote and sharp blue cheese are the perfect flavor contrast in this flavorful blackberry blue cheese burger!

Big flavor bomb of a burger on tap for today! Next weekend officially kicks off summer in my neck of the woods so naturally we’re celebrating.
Fellow blue cheese fanatics, this is very much the burger for you! We’re not keeping it subtle in the blue cheese department today. It is in fact, very in your face flavor-wise and absolutely dynamite alongside a homemade blackberry jam in burger form.

If you’re not a blue cheese fan, you may wanna sit this one out as the flavor is very prominent. But if you love this funky cheese and want the ultimate sweet + savory burger experience, you’re definitely in the right place today!

Ingredients You Will Need
- Blackberries
- Granulated sugar
- Lemon juice
- Brandy
- Mayonnaise
- Blue cheese
- Parsley
- Ground chuck
- Garlic
- Dijon mustard
- Worcestershire sauce
- Buns
- Arugula
Choosing Your Blue Cheese
I recommend buying a wedge of good quality blue cheese for this recipe. Wedge blue cheese tends to have a better flavor than pre-crumbled so I especially recommend using that so you get a strong blue cheese flavor throughout the burger.

Tips for Perfect Blue Cheese Burgers
- Simmer jam 25-30 minutes – this builds flavor and will reduce the berries to a jam-like texture.
- Use blue cheese in both burger patties and mayo – for a strong blue cheese flavor in every bite!
- Don’t overknead meat – handle the beef with care to avoid overmixing and turning it tough.
- Prep all burger toppings before grilling – ideally, you will want all the toppings prepped before you start cooking the burgers. This way once the burgers are off the grill you can assemble and serve them immediately while warm.
- Toast buns – this only takes a moment and instantly elevates any burger. I usually toast my buns directly on the grill after grilling burgers.
Recipe Variations
Try these ideas for a different twist on these burgers.
- Use a different fruit in jam – try strawberries, raspberries, or blueberries.
- Try another cheese – try feta or goat cheese in place of the blue cheese.
- Add bacon – a few strips of crispy bacon would be a great addition to these burgers.
Temperature Cooking Guide
Use this temperature chart to determine when to pull your burgers off the heat for your desired level of doneness. Always use a kitchen thermometer to test the internal temperature.
- Rare – 120-125F
- Medium-rare – 130-135F
- Medium – 140-145F
- Medium-well – 150-155F
- Well-done – 160-165F.

The sweetness from the blackberry jam plays seriously SO well with the bold, tangy blue cheese here. You get the melty blue cheese in both the burger patty and an even bigger hit of flavor in the mayo that’s just so dang good.

Blackberry Blue Cheese Burger

Ingredients
Blackberry Jam
- 1/2 lb fresh or frozen blackberries
- 1/3 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon brandy (optional)
Blue Cheese Mayo
- 1/4 cup mayonnaise
- 1/4 cup crumbled blue cheese
- 1 tablespoon minced fresh parsley
- 1 teaspoon lemon juice
- Salt and pepper to taste
Blue Cheese Burger
- 1 lb ground chuck
- 1/2 cup crumbled blue cheese
- 2 medium cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- Toasted burger buns and arugula for serving
Instructions
Blackberry Jam
- Combine jam ingredients in a small saucepan. Bring to a boil over medium heat, using a wooden spoon to smash blackberries. Reduce heat to low and allow blackberries to simmer 25-30 minutes until reduced and jam-like in texture, stirring occasionally.
- Remove jam from heat, allow to cool, and store in refrigerator up to 2 weeks.
Blue Cheese Mayo
- In a small bowl, combine all mayo ingredients. Season mayo with salt and pepper to taste and store in refrigerator until ready to use.
Blue Cheese Burgers
- In a large bowl, combine ground chuck, blue cheese, garlic, mustard, Worcestershire, salt, and pepper. Gently knead until meat is just combined then divide into 4 portions. Form each portion into a burger patty.
- Preheat an outdoor grill to 400F or if cooking indoors, grease a large cast iron grill pan and heat over medium-high heat. Grill burgers flipping once until burgers reach your desired degree of doneness (see blog post for more info on this)
- Arrange arugula on bottom half of toasted buns. Top with burger patty, a layer of about 1-2 tablespoons blackberry jam, and a spoonful of blue cheese mayo. Top with top half of buns, serve burgers immediately, and enjoy!
