I’m drowning in zucchini at the moment so what’s a girl to do but make a mess of zucchini noodles??
I know, what is this, 2013? To be honest, I’ve never left the zucchini noodle train because it was never just a food trend in my mind. It was a lifestyle.
And these pesto zucchini noodles + seared scallops fit pretty nicely in that lifestyle.

This is an quintessential summer dinner in my mind because it’s putting SO much garden goodness to good use! We’ve got loads of zucchini obviously, fresh cherry tomatoes, and allll the basil making up that pesto.
BTW, if you’re not using this recipe for all your pesto needs, you’re doing it wrong. Anyways, let’s get into this zoodle madness already!

- Olive oil
- Shallot
- Cherry tomatoes
- Zucchini

Spiralizer Alternatives
You can still make this recipe even if you don’t own a spiralizer! Julienne the zucchini with a sharp knife into long, thin strips or use a vegetable peeler to peel the zucchini into shavings.

Tips for Perfect Zucchini Noodles
- Sauté shallot and cherry tomatoes – this builds the flavor base for the zucchini noodles.
- Cook zucchini noodles 2-3 minutes – don’t overcook the zucchini noodles otherwise they will turn mushy. Sauté them until just crisp-tender to preserve the texture.
- Use fresh garlic – using fresh garlic instead of powdered or jarred adds lots of flavor.
- Pat scallops dry with paper towels – this removes any excess moisture from the scallops which will help them form a crisp, golden sear during cooking.
- Sear scallops in butter on each side – be careful not to overcook the scallops or they will turn rubbery. Cook scallops 2-3 minutes on first side and then 1-2 minutes on second side until they turn a rich golden brown and are firm to the touch.
- Finish scallops with fresh lemon – this adds a burst of flavor to the scallops after searing.

Pesto Zucchini Noodles with Seared Scallops

Ingredients
Pesto Zucchini Noodles
- 1 tablespoon extra-virgin olive oil
- 1 small shallot, minced
- 1 cup cherry tomatoes
- 2 lbs zucchini, (about 2 medium) spiralized
- 3 medium cloves garlic, minced
- 1/3 cup jarred or fresh basil pesto
- Salt and pepper to taste
Seared Scallops
- 12 oz sea scallops
- Salt and pepper to taste
- 1-1/2 tablespoons unsalted butter
- 1/2 small lemon
- Fresh minced basil for serving
Instructions
Pesto Zucchini Noodles
- Heat a large skillet over medium-high heat. Add olive oil and swirl to coat bottom. Add shallot and cherry tomatoes to skillet and saute 3-4 minutes until tomatoes are beginning to burst.
- Add zucchini to skillet and toss over medium-high heat 2-3 minutes until zucchini noodles are crisp-tender. Add garlic and cook 1 additional minute until fragrant.
- Toss pesto into zucchini noodles until evenly coated. Season zucchini noodles with salt and pepper to taste and keep warm offheat.
Seared Scallops
- Pat scallops dry with paper towels and season all over with salt and pepper. Heat a large nonstick or stainless steel pan over high heat. Add 1 tablespoon butter and swirl to coat pan.
- Arrange scallops in a single layer in pan and sear 2-3 minutes on first side until golden-brown. Reduce heat to medium-high, flip scallops, add an additional 1/2 tablespoon butter, and cook an additional 1-2 minutes until golden-brown. Scallops are done when they feel firm to the touch. Be careful not to overcook them or they will turn rubbery.
- Arrange scallops on top of zucchini noodles and squeeze lemon half over top. Top noodles with fresh basil and serve immediately. Enjoy!
