Soft and chewy chocolate chip oatmeal skillet cookie bakes up in only minutes in a cast iron skillet and is amazing with a scoop of vanilla ice cream on top!

Be so for real, is there anything more fun than an XL cookie baked in a skillet?? Loaded to capacity with tender oats and gooey chocolate? I think not.
While I love your standard cookie just as much as the next gal, there’s just something magical about a cookie baked pizza-style in a cast iron skillet and cut into big wedges.
Bonus points if a large scoop of ice cream is invited to this party which I strongly recommend.

Hands down my favorite part about this recipe is that it’s got all the best parts about a cookie but without the hassle of rolling them out! The dough comes together in minutes, it gets patted straight into the pan, and sent off to the oven for only 20 minutes.
Scary easy things happening here today, friends. As in, you could probably be convinced to make this one daily.
This Skillet Cookie features…
- A soft and chewy oatmeal cookie base
- A hint of cinnamon and nutmeg with lots of vanilla flavor
- Gooey chocolate chips in every bite

Making the Skillet Cookie

Ingredients You Will Need
- Unsalted butter
- Brown sugar
- Egg
- Vanilla extract
- All-purpose flour
- Oats
- Baking soda
- Cinnamon
- Nutmeg
- Salt
- Semisweet chocolate chips
Choosing Your Skillet
I recommend using a 9-inch cast iron skillet for this cookie. The cast iron retains heat very well and as a result the cookie bakes up very quickly.
If you do not own a cast iron skillet you can use any 9-inch oven-safe skillet, however, be aware that bake time will vary. The cookie is done when the edges are golden-brown.

Tips for Perfect Skillet Cookie
- Grease skillet well – use nonstick spray or vegetable oil to grease your pan so the cookie will release easily later.
- Cream butter and sugar together – make sure your butter is softened to room-temperature and cream well with the sugar several minutes until completely smooth.
- Use room temperature egg – just like the butter, allow the egg to come to room temperature or submerge in hot water for about 2 minutes to quickly warm it. A room temperature egg will incorporate much easier into the dough.
- Measure flour correctly – I use the spoon-and-level technique for measuring flour as this will prevent over-measuring your flour. Use a spoon to scoop flour into the measuring cup, then level with the back of a knife.
- Use old-fashioned rolled oats – I found that rolled oats give a heartier texture than quick-cooking.
- Use stand mixer or mix dough by hand – this recipe is both mixer-friendly and old-fashioned-bowl-and-spoon friendly.
- Bake cookie 20-22 minutes – the cookie is done when the edges are golden-brown. The middle will still appear slightly soft, but this is okay! It will firm up as it cools into a soft and chewy texture.
- Allow cookie to cool before slicing – if you try to slice into the cookie while it’s still warm it will fall apart. For best results, allow cookie to cool 1 hour before slicing. You can always reheat individual slices if you want the chocolate gooey.
Recipe Variations
Try these ideas for a different twist on this cookie.
- Add dried fruit – fold 1/2 cup dried cranberries, cherries, or raisins into the dough.
- Use a different chocolate – try dark chocolate or white chocolate. You can also use a chopped-up chocolate bar.
- Add nuts – fold 1/2 cup chopped toasted pecans or walnuts into the dough.
Serving Suggestions
You can enjoy this skillet cookie as-is fresh from the pan or take it up a level and try topping slices with a scoop of vanilla ice cream or salted caramel sauce.

This skillet cookie just something else, y’all. The edges get a nice crispiness to them from the cast iron skillet, yet the interior stays SO soft and loaded with texture from those tender oats and gooey chocolate chips.

Chocolate Chip Oatmeal Skillet Cookie

Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup packed light brown sugar
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1-1/2 cups old-fashioned rolled oats
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon kosher salt
- 1 cup semisweet chocolate chips
- Vanilla ice cream for serving
Instructions
- Preheat oven to 350F. Lightly grease a 9-inch cast iron skillet and set aside.
- Place butter and brown sugar in the bowl of a large stand mixer, fitted with a paddle attachment OR in a large mixing bowl with a wooden spoon. Mix on medium speed or by hand until creamy, about 2 minutes. Add egg and vanilla to bowl and mix until smooth.
- Combine flour, oats, baking soda, cinnamon, nutmeg, and salt in a separate medium bowl. Add to butter mixture and mix until a soft dough forms. Fold in chocolate chips.
- Pat dough in an even layer in prepared pan. Bake skillet cookie at 350F 20-22 minutes until edges are golden-brown (center will still be slightly soft – this is okay)
- Allow skillet cookie to cool completely on a wire cooling rack before slicing into wedges and serving with ice cream. Enjoy!
