So you’re probably wondering what the deal is. ‘Yo, Sarah! It’s Saturday! You never post on a Saturday, what gives? Today I do, because tomorrow is Father’s Day and I could not even wait 10 more seconds to share this chicken with you. Also, uhhh mostly because I don’t know about you, but Father’s Day here is basically ALL about the meat and I’ve been waiting for the perfect time to share this chicken with y’all.
The time is NOW. This one’s for all the dads out there but specifically to mine because if there’s one thing my dad loves, it’s chicken.
Okay, so I promise I’ll try to keep today’s post short, sweet and Sarah chatter-less. It’s the weekend and we’ve got lots of relaxing that needs to get done.
Oh, and spending time with our dads! Unfortunately I have to work all day tomorrow so I’m gonna miss the Father’s Day cookout my mom is planning and hanging out with Dad which I’m not too thrilled about. So yeah. Lots of Saturday laziness in effect here today since I only get half of a weekend.

Cilantro-Lime Marinated Grilled Chicken

Ingredients
- Juice and zest from 2 limes
- 1/4 cup fresh cilantro
- 3 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon coconut sugar or brown sugar
- 3 tablespoons olive oil
- 2-1/2 lbs chicken breasts
Instructions
- Place first seven ingredients in food processor and pulse several times until smooth. Place chicken in a plastic bag and pour marinade over top. Refrigerate chicken and let it marinate at least 2 hours or overnight.
- Remove chicken from bag and discard marinade. Grill chicken over medium-high heat until juices run clear, about 15 minutes. Serve immediately warm.
