Homemade snickerdoodle cookie crust is filled with sweet apple pie filling and then topped with plenty of cream cheese frosting to create the ultimate snickerdoodle apple cheesecake pie!

Okay, I seriously cannot even play it cool anymore. That pie freak inside me is literally screaming right now and all I can think is pie. I need more pie. Just one more slice of this pie. One more crumb? Maybe just a little frosting to go with my crumb?
Like I said—Freaking out over here. This pie has captured my heart and soul and clearly has no intention of letting go.
Okay so just to clarify: Classic apple pie, warm from the oven with a big ‘ol scoop of whipped cream on top holds a special place in my heart, but….well, so does cheesecake, okay? And snickerdoodles too.

My apple pie got a pretty huge facelift and I in turn kicked those skinny jeans to the curb. seeya!
In order of their appearance we have….
- Snickerdoodle cookie crust. REAL homemade snickerdoodle cookie dough baked up in crust form. Yeeeeeeees.
- Apple pie filling. Simple of the simple—apples, sugar, spices, DONE.
- Cream cheese frosting. Tastes like cheesecake, amazing straight out of the mixing bowl, enough said. ♥
Don’t freak out over the long-ish ingredient list in the recipe below—A lot of the ingredients just repeat themselves. Remember, you ARE building up three layers of pie heaven.
And it will actually surprise you how quickly this pie comes together. Easy peasy-ness! And Friday is probably demanding that you make it right now. Just ‘sayin. 😀
Seriously, a slice of this is pure fat-kid heaven. You might swoon, but I won’t be there to catch you—I’ll be swooning too.

Snickerdoodle Apple Cheesecake Pie

Ingredients
- SNICKERDOODLE CRUST:
- 1/2 cup butter softened
- 1/2 cup coconut sugar or brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup white whole wheat flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- FILLING:
- 5 cups thinly sliced baking apples about 3 large apples
- 1/2 cup coconut sugar or brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 teaspoons white whole wheat flour
- 1 tablespoon lemon juice
- FROSTING:
- 4 oz cream cheese softened
- 1/4 cup butter softened
- 3/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons milk
Instructions
- Make the crust: Grease a 9-in pie plate and preheat oven to 350F.
- In a large bowl, beat butter and sugar until creamy. Beat in egg, vanilla, flour, cream of tartar, baking soda, salt, and cinnamon until a dough forms. (dough will be slightly sticky)
- Turn dough onto a floured surface and very gently knead several times until dough is smooth and elastic. With floured hands, press cookie dough evenly into the bottom and up the sides of prepared pie plate.
- Bake crust at 350F 15 minutes or until edges just begin to turn golden (middle will puff up and appear underdone---this is ok) Remove from oven and gently flatten crust flat into pan. Set aside for a moment while you prepare the filling.
- Make the filling: In a large bowl, combine all filling ingredients. Add filling into pre-baking pie crust and return pie to oven and bake an additional 30 minutes or until filling is bubbly. Remove from oven and cool completely on a wire cooling rack.
- Make the frosting: In a medium bowl, beat cream cheese and butter until evenly creamed. Beat in powdered sugar, vanilla, and just enough milk to achieve a creamy frosting consistency.
- Spread or pipe frosting evenly over cooled apple filling. Chill apple pie until ready to serve. Slice and enjoy!

A Snickerdoodle crust?? Why did I never think of that? I’ve made chocolate chip cookie crusts, oatmeal cookie crusts, peanut butter cookie.. but never occurred to me to make Snickerdoodle!!! Brilliant. And you FROSTED a pie?? DYING. Seriously, this is so genius. All of it!
