Kicked-up sweet potato noodles stir-fry style with lots of veggies! A super-easy dinner ready in 20 minutes with only 7 ingredients.
Let’s make a pact, guys. From here on out we only eat orange noodles, because they’re the prettiest and just the overall best thing ever.
Mostly because in this case, the orange = sweet potato. And sweet potato absolutely makes the cut of my top 10 favorite foods in the universe.
So for those reasons above, a gosh-darn good sweet potato noodle stir-fry just seems like the winning way to celebrate Friday AND finish off my Seven-Ingredient Dinner Series this week with a baaaaaang.
BANG. Sweet potato noodles are in the house. Let us proceed into the pan with our faces first.
So guys, I don’t really do vegetarian stuff on the blog that much. A recipe here, another recipe there…it’s mainly because I live in a house of carnivores and most of the dinner stuff that you see on the blog? Those are our everyday dinners around here. And they almost always include meat otherwise I would be in big trouble.
Once in awhile though…I like to be a rebel. I’m a total mastermind veggie rebel, guys.

A skillet full of veggie noodles with more veggies on TOP of veggies. This is no accident, y’all.
I throw my favorite stir-fry veggies into this skillet, such as broccoli and sweet pepper, but the sky’s the limit for what you want in your skillet!
Except the sweet potato noodles. Those are an actual requirement because they’re the best.
20 itty-bitty minutes later…it’s totally time for a veggie chow-down of epic proportions.
For reals though, can we just eat this noodle stir-fry every second for the entire weekend??

Vegetarian Sweet Potato Noodles Stir-Fry

Ingredients
- 1 medium onion finely diced
- 1 sweet pepper diced
- 4 cloves garlic minced
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 2 medium sweet potatoes spiralized
- 2 tablespoons soy sauce
- Salt and pepper to taste
Instructions
- In a large skillet over medium-high heat, saute onion, pepper, garlic, and broccoli in olive oil until vegetables are just tender, about 7-10 minutes.
- Stir in sweet potato noodles and soy sauce and stir occasionally until noodles are softened, an additional 7-10 minutes. Season noodles with salt and pepper to taste and serve hot. Enjoy!

I recently purchased a spiralizer. I love it. I use zucchini and yellow squash place of noodles in lo mein or stir fries. Excellent! This one is so colorful and appetizing looking!

Oooo these noodles are so pretty! I refuse to buy a spiralizer (I have zero room for any more kitchen stuff!!) but our local grocery store started selling spiralized sweet potatoes and zucchini … I may need to pick some up and try this out! Sounds delicious!

Is it possible to spiralize sweet potatoes without an actual “spiralizer” (which I’ve never heard of!)? Maybe I could try something with my grater…? Hmmmmmm.

You could definitely shred the sweet potatoes, however the consistency of the stir-fry would be vastly different.
