Especially in these dark days of January/early February. I swear, the LONGEST time of the year, you guys. I need a quinoa salad like this on instant repeat every freaking day.
With preferably a gallon of that pretty avocado lime dressing that conveniently comes with. ??
Quinoa is seriously my go-to grain for lunches/dinners lately, y’all. It’s seriously SO good for you and clearly it’s perfect for loading up with basically anything your heart desires. Remember these meal prep bowls a few weeks ago? That was dinner for honestly way more days in a row then I’d care to admit.
So it’s Mexican-style quinoa salad all the freaking way today, friends. This one is SO easy to throw together!
You can use leftover quinoa for this salad easily and it speeds up the whole process by a TON! Simply throw a bunch of romaine in the bowl and pile your quinoa and ALL the Mexican stuff like tomatoes, black beans, shredded cheese, etc on top.
On the tippy-top though…don’t be afraid to go completely nuts with the avocado lime dressing. Yeeeeeeeeees.

Mexican-Style Quinoa Salad with Avocado Lime Dressing

Ingredients
Salad
- 2 cups cooked quinoa, cold
- 3 cups chopped romaine lettuce
- 1/2 cup black beans, drained
- 1 medium tomato, diced
- 1/4 cup sliced black olives
- 1/2 cup shredded cheddar cheese
- 2 tablespoons minced fresh cilantro
- Salt and pepper to taste
Avocado Lime Dressing
- 1 medium avocado, peeled, pitted, and diced
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
Salad
- In a large serving bowl, combine all salad ingredients and season with salt and pepper to taste. Keep cold while preparing the dressing.
Avocado Lime Dressing
- In a food processor or blender, pulse all dressing ingredients several times until completely smooth. Season with salt and pepper to taste. When ready to serve, drizzle dressing over salad and toss to coat. Serve immediately and enjoy!
